Private Jet Catering Trinidad and Tobago: Port of Spain (TTPP / POS), Carnival and Caribbean Flavours
Private jet catering in Trinidad and Tobago brings the energy of one of the Caribbean's most exciting destinations on board. Port of Spain (TTPP / POS) is the gateway to Trinidad, home of the world-famous Carnival, the steelpan and a cuisine shaped by African, Indian, Chinese, European and Middle Eastern traditions. Across the water, Tobago (TTCP / TAB) opens the way to Tobago's quiet bays, coral reefs and rainforest. Whether the trip is for energy business, Carnival or a beach escape, the meal on board can taste of the islands.
Global Diners prepares inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including the Caribbean. In Trinidad and Tobago, delivery is coordinated with your FBO or handler. This guide covers Carnival season, Trinbagonian flavours, the island calendar and how to combine Trinidad with other Caribbean favourites.

Carnival: the greatest show in the Caribbean
Trinidad Carnival takes place on the Monday and Tuesday before Ash Wednesday, in February or early March, but the season begins weeks earlier with fetes, calypso and soca shows and the Panorama steelband competition. The celebrations open before dawn on Carnival Monday with J'ouvert, when revellers dance through the streets covered in paint, mud and cocoa, and continue with the parade of the bands, a dazzling display of costumes, music and colour through Port of Spain.
Carnival moment | What happens | Global Diners suggestion |
Arrival week | Fetes, Panorama and soca shows | Light, fresh menus and tropical fruit for a relaxed arrival |
J'ouvert morning | Before-dawn street celebration | Hearty breakfasts and plenty of coconut water for the flight after |
Parade of the bands | Monday and Tuesday on the road | Return catering ordered in advance, ready on board |
Ash Wednesday | Many departures and a quiet day of rest | Comforting dishes, soups and fresh juices |
Carnival is the busiest time of the year for business aviation in Trinidad. Our team recommends sharing your full itinerary, including the return flight, well ahead of Carnival week, so our kitchens can prepare the full Global Diners menu and agree every delivery with your FBO or handler.
Trinbagonian flavours on board
Trinidad and Tobago has one of the most varied cuisines in the Caribbean. Indian traditions brought roti and curries, African heritage gave callaloo and pelau, and the Chinese, Portuguese and Syrian-Lebanese communities added their own touches. Street food is a national passion, and several favourites travel very well when packed with care.
Doubles: soft fried bara with curried chickpeas and tamarind or mango chutney, Trinidad's beloved breakfast, with sauces packed separately.
Roti: paratha or dhalpuri roti with curried chicken, goat or vegetables, a generous main course with reheating guidance.
Pelau: caramelised chicken with rice, pigeon peas and coconut, a one-pot classic that reheats beautifully.
Bake and shark: the famous Maracas Bay sandwich, prepared with fish and a selection of sauces on the side.
Curry crab and dumpling: Tobago's signature dish, ideal for a leisurely flight.
Sweet finish: coconut sweet bread, black cake at Christmas, tropical fruit and sorrel or mauby drinks.
Trinbagonian food is a celebration in itself: spice, sweetness and generosity, just like Carnival.
Alongside these island favourites, the Global Diners menu brings the same standard served from Paris to Dubai, with caviar, smoked salmon, fine cheeses and pastries. Halal, kosher and alcohol-free menus are available, every item is labelled for allergens, and rum punch or champagne is offered subject to local rules. Restaurant pick-ups can also be coordinated on request.

The island calendar beyond Carnival
Trinidad and Tobago celebrate all year. The dry season from January to May is the most popular time to visit, and the Energy Conference early in the year brings executives from the oil and gas industry to Port of Spain. Easter brings Tobago's traditional goat and crab races, the Tobago Heritage Festival fills July and August with music and storytelling, and Divali, the Hindu festival of lights, illuminates the islands in October or November. At Christmas, parang music, sorrel, black cake and pastelles bring a festive spirit to every home.
The rainy season from June to November brings tropical showers, so flexible delivery windows agreed with your FBO or handler are a sensible choice. The Global Diners client portal is coming very soon. It is designed to bring the Global Diners menu, order requests, confirmations and documents into one space for crew, operations and finance. Until it opens, every request goes through order@globaldiners.com.
Island hopping: Barbados, Sint Maarten and the Bahamas
Trinidad combines beautifully with other Caribbean favourites. Barbados (TBPB / BGI) is a short flight north, with polo, beaches and the Crop Over festival in summer. Further north, Sint Maarten (TNCM / SXM) opens the way to Saint-Martin, St Barths and Anguilla, and Nassau (MYNN / NAS) is the gateway to the Bahamas and the Exumas. Our guides to private jet catering in Sint Maarten and private jet catering in Nassau share local ideas for each island.
For multi-island trips, our team plans each leg in one thread, so passengers enjoy fresh catering at every stop. Crew meals are best ordered as a separate line, as our guide to crew catering on layovers explains, and our article on winter destinations covers the sunshine season.

Private Aviation Peak Periods at Port of Spain: Catering at Port of Spain (TTPP / POS)
Trinidad's busiest periods for private aviation follow its cultural and business calendar. Carnival brings the largest influx of visitors, followed by the Christmas holidays and the energy industry's conference season early in the year. During these weeks, early planning keeps every departure calm. Order catering 48 to 72 hours ahead, confirm passenger numbers as early as possible and agree delivery timing with your FBO or handler. Chilled fruit platters, wraps and curries in thermal carriers suit warm weather, and the rainy season from June to December makes timely coordination useful.

Things to do around Port of Spain (TTPP / POS)
Maracas Bay, on the north coast, is Trinidad's most popular beach and the home of bake and shark. The Northern Range offers rainforest hikes, waterfalls and birdwatching, including the Asa Wright Nature Centre. At sunset, boat tours in the Caroni Bird Sanctuary show flocks of scarlet ibis returning to roost. In the south, Pitch Lake at La Brea is a natural asphalt lake. Tobago, a short flight away, adds reefs, beaches and diving.
Culture and heritage near Port of Spain (TTPP / POS)
Port of Spain reflects centuries of Spanish, French, British, African and Indian influence. Around the Queen's Park Savannah stand the Magnificent Seven, a row of early 20th-century mansions. The National Museum and Art Gallery covers the island's history, and the Red House is home to Parliament. Trinidad is the birthplace of the steelpan, and panyards welcome visitors in the weeks before Carnival.

A.N.R. Robinson International Airport sits at Crown Point on Tobago's south-western tip, within walking distance of Store Bay and a short drive from Pigeon Point and Scarborough, the island capital. Business jet flights bring villa owners, families on Caribbean holidays, wedding parties, divers and birdwatchers, as well as government and business travellers on the short hop from Trinidad. Tobago is quieter and greener than many Caribbean islands, with a leisure peak from December to April and further busy weeks around Easter, the July and August heritage season and Trinidad's Carnival.
Pigeon Point, with its palm-lined beach and thatched jetty, is minutes from the airport. Glass-bottom boats leave from there and from Store Bay for Buccoo Reef and the shallow Nylon Pool. The Main Ridge Forest Reserve, protected since 1776, offers rainforest hikes and birdwatching. In the north-east, Speyside is the base for diving with manta rays and trips to Little Tobago bird sanctuary. Argyle Waterfall, the beaches of Englishman's Bay and Castara, and golf at Mount Irvine complete the menu of activities, and sunset cruises along the leeward coast are a relaxed way to end the day.
