From Manual Coordination to One Organised System: What Inflight Catering Coordination Means for VIP Cabin Crew
VIP cabin crew catering coordination is one of the quiet arts of private aviation. A single catering order looks simple, yet behind it sit several connected tasks: confirming the menu, timing the delivery to the departure, keeping dietary and VIP preferences attached, and closing the order cleanly afterwards. When those tasks flow through one organised process, the crew can give their full attention to the cabin.
At Global Diners we prepare inflight catering in our own kitchens in Paris, Nice and Madrid, with planeside delivery at Paris (LFPB / LBG) and Nice (LFMN / NCE), and in our kitchens across more than 2,500 airports. This guide follows a flight day from the crew's point of view and shows how organised coordination, soon supported by the Global Diners client portal, makes every service calmer and more consistent.

Why a catering order is more than an order
For VIP cabin crew, catering combines hospitality, logistics and precision. The order connects the passenger's preferences, the kitchen, the FBO or handler, the delivery window and, later, the operator's finance team. Each step is easy on its own; the craft lies in keeping them aligned.
The menu: chosen from the one Global Diners menu, with special requests noted clearly.
The timing: delivery agreed with the FBO or handler and matched to the departure time.
The preferences: dietary needs, allergies and VIP favourites attached to the order from the start.
The record: a written confirmation the crew and operator can refer to at any time.
From chasing to coordinating: what organised catering looks like
Organised catering means information is shared once and stays with the order. The crew sends a complete request to order@globaldiners.com, our specialised team prepares a dedicated quote, and the confirmation becomes the single reference for everyone involved. Changes travel through the same thread, so nothing needs to be explained twice.
The best catering day is the one where the crew never has to think about catering, because every detail was settled the evening before.
This approach keeps the strengths of personal service, which our team values highly, while giving the crew a clear and reliable framework. It is also what flight crews tell us they value most, as described in what flight crews expect from a private jet caterer.
Three benefits for VIP cabin crew
Benefit | What the crew gains | In practice with Global Diners |
Control and reliability | Results do not depend on a last-minute phone call | Order 24 hours ahead, written confirmation, delivery agreed with your FBO |
Visibility | Clear knowledge of what was ordered and confirmed | One email thread per order today, the client portal arriving soon |
Consistency | The same standard at home base and at outstations | One menu and our kitchens across 2,500+ airports |
A flight day, hour by hour
The evening before
The crew confirms the passenger count, the delivery time and any final dietary notes. Because the order was placed 24 hours ahead, our kitchen already has everything it needs, and the crew can rest.
The morning of departure
A quick look at the confirmation is enough. If the schedule moves, a short email to the same thread updates the delivery time with our team and the FBO.
Two hours before departure
The catering arrives at the agreed time. At Paris (LFPB / LBG) and Nice (LFMN / NCE), our own kitchens deliver planeside; at Madrid (LEMD / MAD), delivery is at the FBO. Every item is labelled for allergens and comes with reheating guidance, and sauces are packed separately.
On board
The crew plates and serves with confidence, using the labels and guidance supplied. Caviar, smoked salmon, cheese and pastries from the Global Diners menu card are ready to present.
After the flight
The confirmation and the invoice match the order, giving the operator a clear record. The crew notes any passenger feedback for the next mission.

When it matters most: special requests and new airports
The real test of any catering process comes with special requests, late changes and unfamiliar airports. Organised coordination shines here: special requests are part of the confirmed order from the start, late changes follow the same thread, and an outstation receives the same attention as home base. Our guides to last-minute private jet catering and crew catering on layovers share practical tips.
Coming soon: the Global Diners client portal
Our team is preparing the Global Diners client portal, designed to bring the Global Diners menu, order requests, confirmations and documents into one place. For cabin crew, it will make each order easy to follow from request to delivery, at home base and on the road. Until it opens, all orders continue through order@globaldiners.com.
Busy-Season Guide to VIP Inflight Catering at Paris-CDG (LFPG / CDG)
At Paris-CDG the busiest catering periods follow the city's global calendar: fashion weeks, design and technology fairs at Villepinte and Porte de Versailles, Roland-Garros, the Paris Air Show and the festive season. These weeks bring large-cabin and long-range traffic, with several passenger services, crew rotations and connecting itineraries to plan. Handlers and airside access processes are also under pressure. Order at least three days ahead during these periods, especially for larger aircraft, send passenger and crew numbers early, and agree loading times with the handler. Multi-course menus should be planned with packaging that suits each galley, and individual boxes help on quick turnarounds.
Event | When | Where |
Paris Fashion Week | January, late February to March, June and late September to October | Paris |
Maison&Objet | January and September | Paris Nord Villepinte |
Roland-Garros | Late May to early June | Stade Roland-Garros, Paris |
VivaTech | June | Paris Expo Porte de Versailles |
Paris Air Show | June, odd-numbered years | Paris-Le Bourget |
Christmas and New Year holidays | Mid-December to early January | Paris |
Paris Fashion Week at Paris-CDG (LFPG / CDG): January, late February to March, June and late September to October
Paris hosts men's, women's and haute couture shows several times a year, attracting designers, buyers, celebrities and press from around the world. Long-haul private jets and VIP airliners arriving from New York, Asia and the Gulf often use Paris-CDG. Requests tend to focus on light, healthy menus, plant-based dishes and specific dietary preferences, along with Champagne and fine pastries. Order several days in advance and confirm individual meal choices before departure, as itineraries often change late.
Fair, show and tournament dates change annually, so we recommend confirming the latest timings with our team when ordering.
Things to do around Paris-CDG (LFPG / CDG)
Paris offers countless experiences: the Eiffel Tower, the Seine river cruises, the Tuileries and Luxembourg gardens, and the hilltop village of Montmartre. Near the airport, the Château de Chantilly and its horse museum, and the Parc Astérix theme park, are within easy reach. Senlis, a well-preserved medieval town, is a pleasant stop. Golf courses surround the capital, while Disneyland Paris lies further south-east. Shopping walks along the Grands Boulevards and Champs-Élysées and evenings at the opera or cabaret complete a stay. Day trips to the Champagne vineyards around Reims or to the gardens of Giverny are also popular with longer-staying guests.

Paris-Orly Airport lies south of the capital, close to the business districts of the southern suburbs and convenient for the Left Bank, Saint-Germain-des-Prés and the 7th arrondissement. Private and government flights use the airport alongside its busy airline traffic, and Rungis, the world's largest wholesale fresh food market, is right next door. Paris attracts business travellers, fashion and luxury professionals, diplomats and tourists year-round. Fashion weeks, Roland-Garros and the Prix de l'Arc de Triomphe are among the city's busiest periods.

The Château de Versailles, its gardens and the Grand Trianon make a full day, as does the Château de Fontainebleau and its forest further south. The Rungis international food market, next to the airport, offers early-morning tours for food lovers. For sport, Roland-Garros hosts tennis in spring, and racing at Longchamp and Chantilly fills the autumn calendar, with the Prix de l'Arc de Triomphe in October.
