Private Jet Catering São Luís (SBSL / SLZ): Lençóis Maranhenses Gateway
Private jet catering in São Luís (SBSL / SLZ) is the first step of one of Brazil's most spectacular journeys: the white dunes and blue lagoons of the Lençóis Maranhenses. Each year, when the rains of the first half of the year fill the hollows between the dunes, thousands of freshwater lagoons appear across the national park, and travellers arrive from São Paulo, Europe and North America to see them. São Luís, the island capital of Maranhão, is where most of these journeys begin.
Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports. In northern Brazil, São Luís (SBSL / SLZ) is served alongside Belém (SBBE / BEL), Fortaleza (SBFZ / FOR) and Recife (SBRF / REC). This guide focuses on the Lençóis season and the flavours of Maranhão; for airport and crew details, see our São Luís crew and passenger guide and our guide to our 33 Brazilian airports.

The Lençóis Maranhenses season
The Lençóis Maranhenses National Park, recognised as a UNESCO World Heritage Site in 2024, stretches along the Atlantic coast east of São Luís. Its dunes are made of fine white sand, and between them the rain collects in clear lagoons of turquoise and green. The lagoons are fullest from around June to September, which is the favourite season for visits, scenic flights and walks across the dunes. The towns of Barreirinhas, Atins and Santo Amaro are the main bases, reached from São Luís by road or by smaller aircraft.
January to June: the rainy months that fill the lagoons, with green landscapes and quieter travel.
June to September: the lagoons at their fullest, with clear skies and the busiest weeks for visitors.
June: São João and the Bumba-meu-boi celebrations in São Luís, a highlight of the year.
October to December: the dry season, with lower lagoons, steady winds and kitesurfing around Atins.
For crews and passengers, this rhythm shapes the catering. Arrival flights often bring guests who will continue by road the same day, while return flights carry travellers after several days in the dunes, ready for a generous meal on board.
São Luís: an island of azulejos and Bumba-meu-boi
Before or after the dunes, many passengers spend a day in São Luís itself. The historic centre, a UNESCO World Heritage Site, is famous for its colonial mansions covered in Portuguese azulejos, the painted tiles that keep the houses cool in the equatorial heat. In June, the city celebrates Bumba-meu-boi, a festival of music, dance and costume around the legend of an ox, recognised by UNESCO as part of the intangible heritage of humanity. Across the bay, the colonial town of Alcântara offers a quiet half-day of ruins and churches.
A journey to the Lençóis Maranhenses begins and ends with a meal: something fresh before the dunes, and something generous on the flight home.
The flavours of Maranhão on board
Maranhão's cuisine brings together the sea, the mangroves and the Amazonian north. It is less well known than the cooking of Bahia or Minas Gerais, which makes it a delightful discovery for passengers. Our team brings these flavours on board in formats that travel well, alongside the classics of the Global Diners menu.
Arroz de cuxá and seafood
Arroz de cuxá is the signature dish of São Luís: rice cooked with vinagreira leaves, dried shrimp, toasted sesame and cassava flour, with a gentle tangy flavour. It pairs beautifully with grilled fish, shrimp or a peixada maranhense, the local fish stew. Torta de camarão, a light shrimp bake, and crab dishes from the mangroves complete the seafood table.
Juçara, bacuri and cupuaçu
In Maranhão, the deep purple palm fruit known elsewhere as açaí is called juçara, and it is served as a cool cream or juice. Bacuri and cupuaçu, two fragrant fruits of the north, flavour mousses, ice creams and juices. Doce de espécie, a coconut sweet from Alcântara, is a lovely gift to take home.
A pink soda and fresh juices
São Luís has its own soft drink, Guaraná Jesus, pink and sweet with a hint of clove and cinnamon, which passengers love to try. Coconut water, cashew fruit juice and juçara are refreshing alternatives for the equatorial heat.

Planning the journey to the dunes
A Lençóis trip usually combines a jet arrival at São Luís (SBSL / SLZ) with a transfer to Barreirinhas or Atins, and sometimes a scenic flight over the park. A few simple habits help the whole journey flow:
Share the full itinerary with your order, including the arrival, any onward legs and the return date.
Order 24 hours ahead, or a little earlier during the lagoon season and the São João holidays.
Add travel boxes for the road transfer: sandwiches, fruit, snacks and plenty of water and juices.
Plan a generous return menu for passengers flying home after several days in the dunes.
Keep separate crew meals for crews who wait in São Luís during the excursion.

Combining São Luís with Belém, Fortaleza and the North-East
São Luís sits between the Amazon and the North-East coast, which makes it a natural stop on longer itineraries. To the west, Belém opens the way to the Amazon delta, described in our Belém guide. To the east, the Rota das Emoções links the Lençóis with the Parnaíba delta and Jericoacoara, ending near Fortaleza, featured in our Fortaleza guide. Further along the coast, Recife and Natal complete a North-East journey.
Our kitchens follow HACCP principles and a careful cold chain from preparation to delivery, with allergen labels on every item and reheating guidance for hot dishes. Halal, kosher and alcohol-free menus are available, as well as vegan and vegetarian dishes. Wines and caipirinhas are offered subject to local rules, and restaurant pick-ups in São Luís can be coordinated on request.

Local flavours for flights from São Luís (SBSL / SLZ)
Maranhão has a cuisine unlike anywhere else in Brazil. Arroz de cuxá, rice with vinagreira leaves, dried shrimp, toasted sesame and cassava flour, is the signature dish, often served with fried fish or seafood. Torta de camarão, a shrimp omelette pie, crab cooked in the shell and sururu mussels are local favourites. Juçara, the region's dark purple palm berry, is eaten with fish and cassava flour, and fruits such as bacuri, cupuaçu and cajá fill juices and ice creams. Guaraná Jesus, a sweet pink soft drink, is a local icon, and Alcântara's coconut sweet, doce de espécie, makes a fine treat. On board, shrimp torta slices and seafood salads travel well cold. Maranhão specialities can be prepared, or collected from a restaurant, on request.
Also nearby: Belém (SBBE / BEL)
Belém, the capital of Pará, lies a short flight west of São Luís at the mouth of the Amazon.
