Paleo Diet Private Jet Catering: How to Order a Paleo Menu On Board
Paleo diet private jet catering has become a familiar request on business jets, especially among executives, athletes and wellness-minded families who follow the same way of eating at home, at the office and in the air. A paleo menu is built on simple, whole ingredients: meat, fish, eggs, vegetables, fruit, nuts and seeds, prepared without grains, legumes, dairy, refined sugar or processed foods. When the request is clear, it translates naturally into elegant, satisfying meals on board.
Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, from Las Vegas (KLAS / LAS) and Scottsdale (KSDL / SCF) to Paris (LFPB / LBG). This guide explains what paleo means in practice, how to order a paleo menu, which dishes travel best at altitude and how our kitchens label every component so the crew can serve with confidence.

What a paleo menu means on board
The paleo diet takes its inspiration from foods that could, in principle, be hunted, fished or gathered. In practice, passengers who follow it usually ask for generous portions of protein and vegetables, healthy fats such as olive oil, avocado and nuts, and fruit instead of sugary desserts. Some follow the diet strictly, others more flexibly, for example accepting butter, honey or a little dark chocolate. The most useful thing a crew can do is ask the passenger, or their assistant, which version they prefer.
Food group | Usually included | Usually avoided (Global Diners labels each item) |
Proteins | Beef, lamb, poultry, fish, seafood, eggs | Breaded or processed meats |
Vegetables and fruit | All vegetables, salads, berries, citrus, stone fruit | Potato varies by guest |
Fats | Olive oil, avocado, nuts, seeds, coconut | Seed oils and margarine |
Grains and legumes | Not included | Bread, pasta, rice, oats, beans, lentils, peanuts |
Dairy and sugar | Honey or dark chocolate for some guests | Milk, cheese, cream, refined sugar |
Global Diners preparation | Each component labelled, sauces separate | Allergen labels on every item |
Because nuts and seeds play a large role in paleo cooking, allergen labelling matters even more than usual. Every item from our kitchens carries an allergen label, so a nut-free guest on the same flight is just as well looked after as the paleo passenger.
How to order paleo catering with Global Diners
Email order@globaldiners.com with the airport, aircraft registration, date, delivery time and passenger count.
Say how many guests follow a paleo diet, and whether they follow it strictly or flexibly.
Mention exceptions and preferences: butter or ghee, honey, potatoes, dark chocolate, coffee with or without milk.
List any allergies for every guest on board, including nuts and shellfish.
Order 24 hours ahead and check the written confirmation, where each paleo item is named and labelled.
Our specialised team prepares a dedicated quote for every request and confirms each detail in writing. If the same guest flies often, sharing a short profile of their preferences once makes every future order quicker, a habit we describe in what flight crews expect from a private jet caterer.
Paleo dishes that shine at altitude
The best paleo menus rely on dishes that are naturally free of grains and dairy, rather than on substitutes. Grilled and roasted proteins travel beautifully, vegetables keep their colour and crunch when prepared with care, and fruit brings freshness at the end of the meal. Sauces such as chimichurri, salsa verde or a simple lemon and olive oil dressing are packed separately, which keeps every plate bright and lets the crew dress it just before service.
Breakfast: scrambled or poached eggs, smoked salmon, avocado, sautéed spinach and mushrooms, berries and coconut yoghurt.
Light lunch: grilled chicken or prawn salads with olive oil and lemon, beef tataki with crunchy vegetables, cold roast lamb with herbs.
Dinner: sea bass or salmon with roasted vegetables, beef fillet with sweet potato purée for flexible guests, lamb cutlets with ratatouille.
Snacks: crudités with guacamole, mixed nuts and seeds, jerky, olives, sliced fruit.
Dessert: fresh berries, baked apples with cinnamon, dark chocolate for guests who include it.
Smoked salmon and caviar from the Global Diners menu card are natural paleo choices on their own, served without blinis or with cucumber slices instead. Water, sparkling water, herbal teas and black coffee suit most paleo guests, and wine is offered subject to local rules for those who include it.
A paleo menu is not about what is missing. It is about letting a few excellent ingredients speak for themselves.
Paleo in the American West: Las Vegas, Scottsdale and Los Angeles
Wellness culture runs deep in the American West, and paleo requests are frequent on flights from Las Vegas, Scottsdale and Los Angeles. In Las Vegas, guests arriving for conventions, fights and concerts often balance long evenings with clean, protein-rich meals on the way home. Around Scottsdale, the resorts and golf clubs of the Sonoran Desert attract travellers for spa weeks and winter sun, and Sonoran flavours, carne asada, grilled vegetables, salsa and guacamole, fit a paleo menu beautifully when served without tortillas.
Further west, Van Nuys (KVNY / VNY) serves Los Angeles, where California produce, avocados, citrus, berries and fresh fish, makes paleo menus particularly vibrant. Our article on private jet catering in Los Angeles, Las Vegas and San Francisco shares more West Coast ideas.
Paleo for long missions and mixed cabins
On long-haul flights, paleo guests appreciate several smaller services rather than one large meal: a protein-rich breakfast, a salad at lunch, snacks of nuts and fruit during the cruise and a simple grilled main before landing. Hydration matters too, with plenty of water and herbal teas. Crew meals can follow the same principles if the crew wishes.
Most cabins combine several diets. A paleo executive may fly with a vegetarian colleague, a gluten-free guest and children who prefer simple pasta. Paleo menus are naturally gluten-free, which makes them easy to combine, and halal, kosher and alcohol-free menus are also available. Our guide to crew catering for layovers explains how dietary preferences can follow a crew across a multi-day trip. Departures from Paris (LFPB / LBG) and Nice (LFMN / NCE) are delivered planeside by our own kitchens, and every other airport through your FBO or handler.

When Las Vegas Gets Busy: VIP Catering at Las Vegas (KLAS / LAS)
Las Vegas runs on a calendar of trade shows, fights, concerts and sporting weekends, so business aviation traffic at Harry Reid International rises and falls with the convention schedule rather than the seasons. The biggest weeks bring many extra business aircraft and a wonderful buzz to the resorts. January, April, November and the end of December are the liveliest. During those peaks, send catering requests a little earlier than the usual 24 hours, confirm passenger numbers as early as you can, agree delivery timing with the handler and choose compact, travel-ready formats. From June to September, chilled packing and plenty of water keep everyone refreshed in the desert heat.
Event | When | Where |
CES | January | Las Vegas Convention Center and Strip venues |
NAB Show | April | Las Vegas Convention Center |
Formula 1 Las Vegas Grand Prix | November | Las Vegas Strip Circuit |
National Finals Rodeo | December | Thomas & Mack Center, Las Vegas |
New Year's Eve on the Strip | Late December | Las Vegas Strip and Fremont Street |
CES at Las Vegas (KLAS / LAS): January
The consumer technology show opens the year with tens of thousands of exhibitors, executives and media, and business aviation volumes across the Las Vegas area reach one of their annual peaks. Executives often fly in for one or two days of meetings, so efficient catering matters: healthy breakfast boxes, working lunches, sushi and salads that can be eaten between calls. Ordering early, confirming numbers once meeting schedules are set and agreeing delivery slots with the handler keeps the end-of-show departures smooth.
Convention and race dates move from year to year, so please confirm the current schedule with our team when you order.
