Private jet catering in Amman opens the door to one of the most welcoming countries in the Middle East. Amman Marka (OJAM / ADJ)-airport/adj/ojam), the compact civil airport close to the city's hills, is a favourite for regional business and official flights, while Amman Queen Alia (OJAI / AMM), south of the capital, handles long-range jets from Europe, the Gulf and beyond. From Amman, many journeys continue to Petra, Wadi Rum and the Red Sea at Aqaba (OJAQ / AQJ), or down to the Dead Sea resorts.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including all three Jordanian airports. This guide explains how Marka and Queen Alia complement each other, which Jordanian dishes travel best, how to plan around Ramadan and the seasons, and how to cater a Petra or Wadi Rum journey from start to finish.

Marka or Queen Alia: two airports for two kinds of flight

Marka sits within the city, which makes it convenient for official visits, regional shuttles and short flights to Aqaba or neighbouring capitals. Queen Alia, around thirty kilometres south of the centre, is the natural choice for long-range arrivals and departures, and for passengers heading directly to the Dead Sea or the south. Both welcome business aviation all year.

Jordanian flavours for the cabin

Jordanian cooking belongs to the great Levantine table: generous mezze, slow-cooked lamb, fragrant rice, fresh herbs and an extraordinary tradition of sweets. Much of it travels very well, especially the cold mezze, which needs no reheating and suits short regional flights perfectly.

  • Cold mezze: hummus, moutabal, tabbouleh, fattoush and labneh with olive oil and za'atar, served with warm flatbread.

  • Warm dishes: chicken or lamb skewers, maqluba, the upside-down rice dish, and lamb and rice in the mansaf tradition, in travel-ready portions.

  • Breakfast: manakish with za'atar and cheese, falafel, eggs, olives, tomatoes and fresh mint tea.

  • Sweets: knafeh, baklava and ma'amoul filled with dates or pistachios.

  • Refreshments: fresh lemon and mint juice, tamarind and Arabic coffee with cardamom.

Halal menus are standard on Jordanian departures, and kosher and alcohol-free menus are also available; wine and champagne are offered subject to local rules. Every item carries allergen labelling, which matters with recipes rich in sesame, nuts and dairy, and hot dishes come with reheating guidance. Restaurant pick-ups from a favourite address in Jabal Amman or Abdoun can be coordinated on request.

In Jordan, hospitality begins with a cup of coffee and a table full of mezze, and the cabin should feel just as welcoming.

Catering a Petra and Wadi Rum journey

Petra and Wadi Rum are among the most memorable journeys in the region. Many guests fly into Amman, spend a few days in the capital and at the Dead Sea, then continue south by road or by a short flight to Aqaba, the gateway to the desert and the Red Sea. Each stage invites a different menu.

  1. Arrival in Amman: a light welcome tray with mezze, fruit and fresh juices.

  2. Flight to Aqaba: compact boxes with sandwiches, salads and sweets for a short hop.

  3. Desert day: our team can prepare picnic-style boxes for collection on request.

  4. Return from Aqaba or Amman: a warm main, mezze and Jordanian sweets to close the journey.

One email covers every leg. Our team prepares a dedicated quote for each departure and coordinates each delivery with your FBO or handler, so the crew always has the right menu on board.

Seasons, Ramadan and Eid

Jordan's calendar follows both the seasons and the Islamic year. Spring, from March to May, is the favourite touring season for Petra, Wadi Rum and Jerash. Summer brings Gulf families to the cooler hills around Amman, and the Jerash Festival of Culture and Arts fills July evenings. During Ramadan, our team adapts menus for iftar timing, with dates, soups, mezze and qatayef, and prepares suhoor options for pre-dawn departures. Eid al-Fitr and Eid al-Adha bring many family and official flights.

Amman is a centre for diplomacy, international organisations and regional business, and many flights carry delegations and humanitarian teams. Individually labelled meals, discreet presentation and clear allergen information make these missions simple for the crew. Our guide to government and diplomatic flight catering shares our approach. For flights onward to Europe, our own kitchen at Paris Le Bourget (LFPB / LBG) delivers planeside for the return.

Amman Marka (OJAM / ADJ) Calendar for Private Jet Catering

Marka is a compact airfield, and business flights are liveliest around religious holidays, the spring touring season and summer, when Gulf families arrive for cooler evenings in the hills. For these periods, order earlier than the standard 24 hours, confirm passenger numbers and any iftar or suhoor timing at the time of booking, and agree the delivery window with the handler. Sealed individual boxes and room-temperature mezze suit short regional sectors, while hot dishes travel best in thermal carriers.

Ramadan and Eid al-Fitr at Amman Marka (OJAM / ADJ): Varies with the Islamic calendar (moves about 11 days earlier each year)

The holy month changes the rhythm of the whole city: offices shorten their hours, evenings become busy with iftar gatherings and Eid al-Fitr brings many family and official flights. Flights out of Marka often time departures around sunset. Catering works best when planned around the fast, with iftar boxes of dates, lentil soup in thermal containers, mezze and qatayef pastries, plus a suhoor option for pre-dawn legs. Ordering a little earlier than usual during the holy month keeps everything relaxed.

Religious holidays in Jordan follow the lunar calendar and festival programmes are announced each year, so please confirm the current dates with our team when you place your order.

Things to do around Amman Marka (OJAM / ADJ)

Amman spreads across a series of hills, and the old downtown around the Roman Theatre is the natural starting point. Climb to the Citadel on Jabal al-Qal'a for views over the city and the remains of the Temple of Hercules. Rainbow Street in Jabal Amman is good for an evening walk among cafés. Beyond the city, Jerash has some of the best-preserved Roman streets in the region, about an hour north. The Dead Sea, roughly an hour west by road, offers floating and spa resorts, while Madaba's mosaic map and Mount Nebo make an easy half-day. Petra and Wadi Rum need a longer trip south.

Culture and heritage near Amman Marka (OJAM / ADJ)

Amman has been inhabited for thousands of years and was the Roman city of Philadelphia, as the Theatre and Citadel show. The Jordan Museum in Ras al-Ain presents the country's archaeology, including fragments of the Dead Sea Scrolls. Darat al-Funun and the Jordan National Gallery of Fine Arts cover modern Arab art. The King Abdullah I Mosque, with its blue dome, welcomes visitors outside prayer times, and the limestone architecture across the hills gives the city its pale character.

Also on the Global Diners network: Amman Queen Alia (OJAI / AMM)

Queen Alia International serves Amman, Jordan's capital and a centre for government, diplomacy, international organisations and regional business. Business jet flights bring officials, investors and humanitarian agency teams, as well as leisure guests travelling to the Dead Sea resorts, the rock-cut city of Petra and the desert landscapes of Wadi Rum. The Red Sea port of Aqaba is reached by road or a short connecting flight. Spring and autumn are the most comfortable seasons for touring, while business flights continue throughout the year.

From Amman, visitors reach the Dead Sea in under an hour to float in its mineral-rich water and visit the resort spas. Petra, with its rock-cut Treasury and Monastery, is the country's highlight, and Wadi Rum offers jeep tours, camel rides and desert camps under clear skies. Closer to the capital, the Roman city of Jerash and the Ajloun forest offer gentle day trips. In Amman itself, Rainbow Street and the Citadel hill are popular for walks and views. Those seeking adventure can hike the Wadi Mujib canyon or dive and snorkel the coral reefs of the Red Sea at Aqaba, in the far south of the country.
