Private Jet Catering Miami: South Florida Winter Season Guide (KOPF / OPF), Fort Lauderdale and Palm Beach
Private jet catering in Miami comes into its own between November and April, when South Florida becomes the winter home of business aviation on the East Coast. Owners fly down from New York, Boston and Chicago, European families arrive for the holidays, art collectors gather for Miami Art Week and yachts line the marinas from Miami Beach to Fort Lauderdale. Miami Opa-locka (KOPF / OPF), Fort Lauderdale (KFLL / FLL) and Palm Beach (KPBI / PBI) form the three gateways of the season, each with its own character.
Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including the whole South Florida area. This guide follows the winter season month by month, compares the airports, and shares the Floribbean, Cuban and Latin flavours passengers love on departures from Miami.

Three gateways for the South Florida season
Miami-Opa Locka Executive Airport, north of downtown, is dedicated to business aviation and convenient for Miami Beach, Bal Harbour, Aventura and the Design District. Fort Lauderdale, a short drive further north, serves Las Olas, the yacht marinas and the communities of Broward County. Palm Beach welcomes the owners of the island's winter residences, while Miami Executive (KTMB / TMB) in the south-west is practical for Coral Gables, Pinecrest and the Keys road. Miami (KMIA / MIA) completes the picture for international connections.
Airport | Best for | Global Diners catering approach |
Miami (KOPF / OPF) | Miami Beach, Bal Harbour, Aventura, Design District | Full winter menus, holiday hampers and crew meals, coordinated with your FBO |
Fort Lauderdale (KFLL / FLL) | Las Olas, yacht marinas, Broward County | Light Floribbean menus and yacht-week sharing boards |
Palm Beach (KPBI / PBI) | Palm Beach island, Jupiter, Wellington | Elegant brunches and family dinners for the season's residents |
Miami Executive (KTMB / TMB) | Coral Gables, Pinecrest, the road to the Keys | Compact trays for light jets and island hops |
One email to order@globaldiners.com covers every airport, so crews flying a Teterboro to Opa-locka shuttle, a Fort Lauderdale to Nassau hop and a return north follow exactly the same routine. Our guide to the Palm Beach winter season looks more closely at the island.
The winter season, month by month
The South Florida calendar follows the sun. Each month brings its own guests, and the menu changes with them.
Month | What brings aircraft to South Florida | Menu ideas from Global Diners |
November | Arrival of the winter residents and Thanksgiving family flights | Roast turkey, cornbread stuffing, cranberry relish and pumpkin pie, packed for reheating |
December | Miami Art Week and the Christmas holidays | Elegant canapés, caviar, festive desserts and late suppers after the openings |
January | New Year departures and the heart of the winter season | Light, fresh menus: stone crab, ceviche-style seafood and tropical fruit |
February | Food and wine festival weekends and the international boat show | Sharing boards, Floribbean seafood and generous crew meals |
March and April | Spring tennis, Easter holidays and the return north | Brunch trays, salads and family menus for the flight home |
During the busiest weeks, notably Miami Art Week in December and the holiday period, we recommend ordering a little earlier than the usual 24 hours and confirming passenger numbers as soon as they are known. Stone crab claws, a South Florida speciality, are in season from mid-October to early May: tell us if you would like them on board.
Floribbean, Cuban and Latin flavours on board
Miami cuisine blends the Caribbean, Latin America and the American South, with superb local seafood and tropical fruit. These dishes travel beautifully when they are prepared with the cabin in mind.
Stone crab claws: served chilled with mustard sauce, a South Florida winter classic.
Ceviche-style seafood: snapper, shrimp or scallops with citrus, avocado and plantain chips, prepared for the cabin.
Cuban favourites: a Cubano sandwich on pressed bread, ropa vieja with rice and black beans, and croquetas.
Grilled fish: mahi-mahi or grouper with mango salsa, served chilled or gently reheated.
Key lime pie: the signature Florida dessert, with fresh berries and guava pastries.
Tropical fruit: mango, papaya, pineapple and passion fruit, freshly cut for breakfast and dessert.
Café cubano: strong, sweet espresso served with pastelitos de guayaba on the morning flight north.
The Global Diners menu card, with caviar, smoked salmon, fine cheeses and pastries, is available on every departure, and wine or Champagne can be included subject to local rules. Halal, kosher and alcohol-free menus are available, as are vegetarian, vegan and gluten-free dishes, all with allergen labelling.

In South Florida, the winter menu should taste of the sea and the sun: chilled stone crab, bright citrus, tropical fruit and a little Cuban coffee for the journey home.
Art Week, yacht weekends and family holidays
Each winter occasion has its own rhythm. During Miami Art Week, collectors and gallery teams often fly in for two or three days and leave late in the evening after dinners and openings: a light supper with soups, grilled fish and desserts suits these departures perfectly. Yacht owners joining their boats in Fort Lauderdale or Miami Beach appreciate sharing boards and fresh seafood for the flight in, then generous family meals on the return.
Christmas and New Year bring multi-generation family trips. We prepare children's menus, festive desserts and holiday hampers, and label every tray by name on request. For the onward hop to the islands, see our Florida to the Bahamas shuttle guide, which covers flights to Nassau (MYNN / NAS).
Crew meals and shuttle operations

Winter brings many shuttle rotations between the North-East and South Florida, and crews often fly several legs in a few days. Balanced crew meals with grilled chicken or fish, salads, grain bowls and fresh fruit, packed and labelled individually, make every rotation easier. Our guide to crew catering for layovers and multi-day trips shares more ideas, and our article on catering at major US airports covers Miami International.

Event-Season Private Jet Catering at Miami Opa-locka (KOPF / OPF)
Event | When | Where |

Orange Bowl and the college football bowl season | Late December or early January | Hard Rock Stadium, Miami Gardens |

Orange Bowl and the college football bowl season at Miami Opa-locka (KOPF / OPF): Late December or early January
The Orange Bowl, part of the college football play-off system, brings university supporters, boosters and media to Miami Gardens around the New Year. Because the stadium is so close, many fans prefer Opa-locka to the busier commercial airports. Tailgate-style menus are popular: sliders, wings, barbecue platters and generous snack boxes. Book a few days before the game, confirm final numbers once the teams' supporters are known and allow for late-night departures straight after the final whistle.
Race weekends, bowl games and art fairs shift slightly each year, so ask our team to confirm the current dates when ordering.
Local flavours for flights from Miami Opa-locka (KOPF / OPF)
North Miami and the neighbourhoods around Opa-locka reflect the wide mix of communities that make South Florida's food culture so varied. Haitian cooking is well represented: griot, marinated and fried pork, served with pikliz, a spicy pickled cabbage, and diri ak djon djon, black mushroom rice, are full of flavour. Venezuelan and Colombian arepas, filled with shredded beef, chicken and avocado (reina pepiada) or cheese, are a popular light meal, and empanadas from across Latin America make practical finger food for crew and passengers. Cuban classics remain essential: Cuban sandwiches, croquetas and pastelitos with strong Cuban coffee. Aventura and Bal Harbour offer a wide choice of upscale restaurants, from Japanese omakase to Italian and Mediterranean, suitable for pick-up. Florida's seafood is a highlight, with stone crab claws in season, Gulf and Atlantic shrimp, and snapper, grouper and mahi-mahi, which can be grilled and served cold with tropical salsas. Tropical fruit such as mango, guava and passion fruit appears in juices, desserts and fruit platters. For dessert, Key lime pie, tres leches cake and flan are dependable choices that travel well. Kosher catering is readily available in nearby Aventura and Miami Beach on request. Restaurant pick-up across North Miami and Miami Beach is available on request.
Also on the Global Diners network: Fort Lauderdale (KFLL / FLL)
Business jet flights bring yacht owners and charter guests joining their boats, cruise passengers heading to Port Everglades and visitors to Las Olas Boulevard and the beaches of Fort Lauderdale and Hollywood. The airport is also convenient for Miami and the Palm Beaches. Winter residents arrive from the Northeast and Canada between December and April, and the annual boat show in the autumn is one of the busiest weeks of the year.
