Private jet catering in Nassau (MYNN / NAS) is often the first service of a Bahamian itinerary. Lynden Pindling International, on the western side of New Providence, welcomes owners flying in for a long weekend, executives visiting the island's financial and wealth-management community, and crews clearing into the Bahamas before continuing to the Out Islands. This crew guide brings together everything you need to plan catering at Nassau calmly: the airport, the FBOs, the right menus for short and long sectors, and the way our team coordinates every delivery.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports. In the Bahamas, Nassau (MYNN / NAS) is our natural hub, with onward flights to Exuma (MYEF / GGT), Chub Cay (MYBC / CCZ) and the Family Islands, and frequent shuttles from Miami (KMIA / MIA) and South Florida.

Lynden Pindling International at a glance

Lynden Pindling International is the main gateway to the Bahamas and the busiest airport in the country. Private aircraft are welcomed by two FBOs, Odyssey Aviation and Jet Nassau, which handle arrivals, departures and catering deliveries for business jets of every size. The airport sits a short drive from Cable Beach, Baha Mar and the gated communities of western New Providence, and about half an hour from Paradise Island, so many passengers reach their villa or resort within minutes of landing.

What to order for flights from Nassau

Most departures from Nassau fall into three families. Short sectors to Florida or the Out Islands last under an hour, so chilled platters, sandwiches, salads and fruit are ideal. Medium sectors to the US north-east or Canada call for a full meal service, with a hot main course and dessert. Long-range flights to Europe or South America deserve the complete Global Diners menu, from canapés to cheese.

Short hops: under an hour

For the 30 to 50 minutes it takes to reach Exuma, Eleuthera or Miami, the cabin crew has little time to plate. Individually packed salads, finger sandwiches, sushi, fruit skewers, pastries and cold drinks can be served almost as soon as the seatbelt sign goes off. Conch salad, packed on ice, is a refreshing Bahamian welcome for guests arriving for the weekend.

Medium sectors: a full meal

Flights to New York, Boston, Toronto or Chicago leave time for a proper meal. A starter of smoked salmon or a seasonal salad, a main course of grilled grouper, beef tenderloin or chicken with island vegetables, and a dessert such as guava duff or a chocolate tart make a well-paced service. Hot dishes arrive with reheating guidance and sauces packed separately.

Long-range: the complete Global Diners menu

Transatlantic departures from Nassau can enjoy the full menu card, including caviar, smoked salmon, cheese and pastries, with a breakfast service before landing. Our article on galley catering for private jets explains how each item is packed for the galley.

Working with the FBOs and handlers at Nassau (MYNN / NAS)

Every Global Diners delivery at Nassau is coordinated with your FBO or handler. Our specialised team confirms the delivery time against your departure, shares the order details, and makes sure the catering reaches the aircraft in perfect condition. Crews simply tell us which FBO they are using, Odyssey Aviation or Jet Nassau, and we organise the rest.

  • Agreed delivery time: set according to your departure and the FBO's ramp schedule.

  • Cold chain: chilled items stay refrigerated until hand-over, which matters in the Bahamian heat.

  • Clear labels: each item shows the dish name and allergens, with reheating guidance for hot dishes.

  • Restaurant pick-ups: a favourite Nassau restaurant can be coordinated on request, from Cable Beach to Paradise Island.

Our guide to how handling agents and caterers work together explains this coordination in more detail, and what flight crews expect from a private jet caterer describes the standards we follow everywhere.

Heat, ground time and the galley

Nassau is warm all year, and summer afternoons are hot and humid. Our kitchens plan for that: chilled dishes stay in the cold chain until delivery, desserts travel in sturdy individual containers, and fruit is cut and sealed so it stays fresh through a long turnaround. For aircraft that wait on the ramp before an evening departure, chilled starters and mains designed for reheating keep the service relaxed.

In Nassau, the best catering is the one that arrives cool, clearly labelled and ready to serve the moment the passengers step on board.

Weight also matters on short island sectors, and our article on catering weight and flight efficiency explains how we size each order for the mission.

Dietary menus and local flavours

Halal, kosher and alcohol-free menus are available at Nassau, together with vegetarian, vegan and gluten-free dishes, and every item carries an allergen label. Wine and champagne are offered subject to local rules. For a taste of the islands, our team can add cracked conch, grouper fingers, peas 'n' rice, Bahamian mac and cheese, johnnycake and tropical fruit, as well as switcha, the local limeade.

The western end of New Providence is home to exclusive gated communities, golf clubs and marinas, and the island is a centre for private banking, wealth management and international financial services. Battle 4 Atlantis at Nassau (MYNN / NAS): Late November

This early-season US college basketball tournament is played at the Atlantis resort over the Thanksgiving period and brings teams, boosters, broadcasters and families to Paradise Island. Team charters and private jets arrive within a few days of each other, often alongside Thanksgiving holiday traffic. For team flights, order larger quantities of protein-rich hot meals in thermal carriers, fruit, and recovery snacks; for owner flights, roast turkey platters and seasonal sides are available on request. Lock in numbers and drop-off times with the handler several days before tip-off.

Junkanoo, tournament and holiday dates move slightly each year, so check the current schedule with our team when you place your order.

Dining and shopping near Nassau (MYNN / NAS)

Arawak Cay, known locally as the Fish Fry, lines up colourful shacks serving cracked conch, conch salad, grilled snapper and Kalik beer (alcohol subject to local rules). Graycliff, in an 18th-century mansion, is known for its wine cellar and cigar rolling. Resort restaurants at Baha Mar and Atlantis cover everything from steakhouses to Japanese. For shopping, Bay Street mixes duty-free jewellery, watch and perfume boutiques with local craft shops, and the straw market sells hand-woven baskets and souvenirs.

Local flavours for flights from Nassau (MYNN / NAS)

Bahamian food centres on conch, the island's signature seafood. Conch salad, raw conch diced with peppers, onion, tomato and citrus, is prepared fresh at stands along the waterfront, while cracked conch and conch fritters are fried favourites. Spiny lobster, known locally as crawfish, grouper and snapper are local catches, typically served with peas 'n' rice and macaroni and cheese. Guava duff, a rolled steamed pudding with butter sauce, is the classic dessert, and Bahamian switcha, a fresh limeade, is a traditional drink. For the cabin, conch salad and lobster salad are packed chilled for early service, grouper fillets reheat well, and conch fritters can be warmed briefly. Pick-up from Nassau's Arawak Cay or Paradise Island restaurants is available on request.

Also nearby: Chub Cay (MYBC / CCZ)

Chub Cay Airport serves a small private island at the southern end of the Berry Islands, best known among sport fishermen. Deep water lies close to the island, where the Tongue of the Ocean meets the Northwest Providence Channel, and that has made Chub Cay a long-standing base for billfish, tuna and wahoo fishing. Most traffic consists of private and charter aircraft from Florida and Nassau, carrying anglers, boat owners and guests of the resort and marina. The island is quiet, with busier spells during the spring and summer fishing season and around US holidays.

Sport fishing is the main reason to visit Chub Cay, with offshore trips for marlin, tuna, wahoo and mahi-mahi, and bonefishing on nearby flats. The island has quiet white-sand beaches and clear water for swimming and snorkelling. Diving reveals coral reefs, walls and abundant marine life along the edge of deep water. Boat trips explore the southern Berry Islands, including small uninhabited cays and sandbars, while kayaking and paddleboarding suit calmer days in protected bays. Evenings are spent watching the boats return to the marina with their catch, followed by sunset on the beach and a quiet dinner by the water.
