Safari Private Jet Catering: Kilimanjaro (HTKJ / JRO) and the Serengeti Gateways

Safari private jet catering begins long before the first game drive. For guests heading to the Serengeti, the Ngorongoro Crater, Tarangire or Lake Manyara, Kilimanjaro (HTKJ / JRO) is the natural arrival point: it sits between Moshi and Arusha, beneath the snows of Mount Kilimanjaro, at the start of the northern safari circuit. A thoughtful menu on the long flight in, and a well-planned return after days in the bush, are part of the adventure.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including East Africa. This guide covers the safari seasons, the menus that suit long-range arrivals and onward light-aircraft legs, the flavours of Tanzania, and how to combine Kilimanjaro with Zanzibar (HTZA / ZNZ) for a beach finale on the Indian Ocean.

Kilimanjaro: the gateway to the northern safari circuit

Most safari itineraries in northern Tanzania start at Kilimanjaro International Airport. Long-range business jets arrive from Europe, the Gulf and South Africa, and guests then continue by road or on light aircraft to lodge airstrips across the Serengeti and the Ngorongoro highlands. Many trips end in Zanzibar, or combine Tanzania with Kenya through Nairobi (HKJK / NBO).

Menus for the long flight in

Safari guests often fly overnight from Europe or the Gulf and arrive in the morning, eager to set off. A light dinner after departure, a good rest and a bright breakfast before landing help them start the first day refreshed. Our guide to the jet lag menu for long-haul flights explains how to time each service.

  • Dinner after take-off: grilled fish or chicken with vegetables and grains, followed by a light dessert.

  • Rest: still water, herbal infusions and fresh fruit left in the galley.

  • Breakfast before landing: tropical fruit, yoghurt, eggs, pastries and Tanzanian coffee from the slopes of Kilimanjaro.

  • Arrival snacks: nuts, dried mango and energy bars for the drive to the lodge.

Safari boxes for light aircraft and lodge transfers

Onward legs to the lodges are short and often flown on smaller aircraft, where compact, light packaging makes life easier for everyone. Our safari boxes are designed for these moments: neatly packed, individually labelled and easy to enjoy on a short flight or a road transfer.

  • Wraps and sandwiches: chicken, roasted vegetables or tuna on fresh bread or chapati.

  • Samosas and mishkaki: spiced beef or vegetable samosas and marinated skewers, served at room temperature.

  • Fresh fruit: mango, pineapple, passion fruit and small sweet bananas.

  • Sweet treats: banana bread, coconut biscuits and dark chocolate.

  • Hydration: still water, fresh juices and coconut water.

On safari, the best menu is the one that follows the day: a bright breakfast before landing, a compact box for the bush flight and a warm dinner for the journey home.

Tanzanian and Swahili flavours

Tanzanian cuisine is generous and fragrant, shaped by Swahili traditions on the coast, the spice trade of Zanzibar and the produce of the highlands. Many dishes travel well and bring the flavours of the trip on board.

  • Nyama choma: grilled beef or goat, served sliced with kachumbari, a fresh tomato and onion salad.

  • Pilau: rice cooked with cardamom, cinnamon, cumin and cloves, ideal for reheating.

  • Coconut curries: fish or chicken in coconut sauce, a coastal favourite, gently reheated.

  • Chapati and mandazi: soft flatbreads and lightly sweet doughnuts for breakfast or tea.

  • Ndizi: plantains cooked with coconut or grilled as a side dish.

  • Kilimanjaro coffee and spiced tea: the perfect close to a meal.

Halal menus are widely appreciated in East Africa, and kosher, vegetarian, vegan and gluten-free dishes are available too, all with allergen labelling. Wine and Champagne can be included subject to local rules, and the Global Diners menu card, with caviar, smoked salmon, fine cheeses and pastries, is available on every departure.

Crew meals and multi-leg safari itineraries

Safari trips often keep crews in the region for a week or more, with positioning legs between Kilimanjaro, Zanzibar, Nairobi and Johannesburg. Balanced crew meals with grilled proteins, vegetables, grains and fresh fruit, packed and labelled individually, keep everyone at their best. Our guide to crew catering for layovers and multi-day trips shares more ideas, and our Nairobi safari catering guide covers the Kenyan side of the migration.

Private Aviation Peak Periods at Kilimanjaro: Catering at Kilimanjaro (HTKJ / JRO)

The long dry months from June to October, the short-rains break around Christmas and the calving weeks early in the year are the liveliest periods for business jets linking long-haul flights with light aircraft heading to the Serengeti, Ngorongoro and Tarangire. Order catering two or three days ahead, send final passenger numbers as soon as safari itineraries are fixed, and agree a delivery time with your handler around light-aircraft connections. Great Migration dry season at Kilimanjaro (HTKJ / JRO): June to October

The dry season concentrates wildlife around rivers and water holes, and the wildebeest herds move through the central and northern Serengeti. Order catering before arrival, as many groups land, transfer and continue their journey within a few hours. Individually packed meals, chilled salads and fruit platters work well for these quick connections.

Safari seasons and race dates shift slightly from one year to the next, so please check the timings with our team when you send your order.

Things to do around Kilimanjaro (HTKJ / JRO)

Kilimanjaro International is the usual starting point for northern Tanzania's safari circuit. Further west lie Tarangire, known for large elephant herds, Lake Manyara, the Ngorongoro Crater and the Serengeti. Mount Kilimanjaro rises above Moshi, with day hikes on its lower slopes for those not attempting the summit.

Culture and heritage near Kilimanjaro (HTKJ / JRO)

Around Moshi, Chagga villages on the mountain slopes show traditional farming of bananas and coffee, and some still preserve underground tunnels once used for shelter.

Also on the Global Diners network: Zanzibar (HTZA / ZNZ)

Stone Town is a UNESCO World Heritage site, a maze of narrow lanes, carved wooden doors and coral-stone houses reflecting Swahili, Arab, Indian and European influences. The Old Fort hosts cultural events, and the Anglican Cathedral stands on the site of the former slave market, with a memorial and museum. The Old Dispensary, with its ornate carved balconies, recalls the merchant era, and the house linked to Freddie Mercury's birth draws music fans.

Dining ranges from the Forodhani Gardens night market, with grilled seafood and Zanzibar pizza, to rooftop restaurants in Stone Town overlooking the sea and beach restaurants on the coasts. Swahili, Indian and Arab flavours appear everywhere. For shopping, Darajani market sells spices, fruit and fish, while Stone Town's lanes are full of craft shops selling Tingatinga paintings, carved chests, kanga and kikoi fabrics, and packs of local spices and coffee.
