Bahamas Out Islands From Nassau: Exuma (MYEF / GGT), Eleuthera and Harbour Island Catering
Private jet catering for the Bahamas Out Islands turns a short hop from Nassau into the first moment of a holiday. Exuma's turquoise cays, the pink sand of Harbour Island and the quiet coves of Eleuthera are only 30 to 45 minutes from Lynden Pindling, and many itineraries combine Nassau with one or more of these islands. This guide explains how Global Diners plans catering for those island hops, from the main airport to the smaller airfields of the Family Islands.
Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports. For the Out Islands, our team works from Nassau (MYNN / NAS) and with the handlers at Exuma (MYEF / GGT), North Eleuthera (MYEH / ELH), Governor's Harbour (MYEM / GHB) and Rock Sound (MYER / RSD), always coordinating delivery with your FBO or handler.

Three island worlds, one short flight from Nassau
The Out Islands, also called the Family Islands, each have their own personality. Exuma is a chain of more than 300 cays stretching south-east of Nassau, a paradise for yachts, bonefishing and private island retreats. Eleuthera is a long, narrow island of pink beaches, pineapple fields and colonial settlements. Harbour Island, just off North Eleuthera, is the chic little island of Dunmore Town, golf carts and a famous pink-sand beach.
Island | Airport | Typical guests | Catering focus |
Exuma | Exuma (MYEF / GGT) | Yacht guests, private island owners, anglers | Chilled boxes and platters for boat transfers |
Harbour Island | North Eleuthera (MYEH / ELH) | Homeowners, house parties, honeymooners | Celebration platters, lobster in season |
Central Eleuthera | Governor's Harbour (MYEM / GHB) | Villa groups and families | Sharing platters, pineapple desserts |
South Eleuthera | Rock Sound (MYER / RSD) | Sailors, villa guests, anglers | Robust chilled dishes, fresh fish |
Exuma (MYEF / GGT): catering for yachts and private cays
Exuma International, near George Town, is the gateway to Elizabeth Harbour and the Exuma Cays. Many passengers step from the aircraft onto a tender or a seaplane, heading for a yacht at anchor or a private island further up the chain. For these guests, catering often serves two purposes: a light meal on board and refreshments for the boat transfer.
For the flight: salads, sushi, finger sandwiches, fresh fruit and pastries, ready to serve on a short sector.
For the transfer: sealed boxes with cold drinks, fruit and snacks, easy to carry onto a tender.
For the arrival: a seafood platter or a cheese board to welcome guests on the yacht, packed chilled.
For the return: grilled fish, conch fritters and island sides, coordinated with Odyssey Aviation or Strachan's Aviation.
The Exuma Cays are also home to some of the Bahamas' most photographed moments, from the swimming pigs of Big Major Cay to Thunderball Grotto near Staniel Cay. Light, colourful food suits these sunny days perfectly.
Many Exuma guests spend a week or more on board a yacht, so the flight catering often sets the tone for the whole stay. A welcome tray of tropical fruit, smoked salmon and French pastries, a chilled bottle of champagne subject to local rules, and a cheese board from the Global Diners menu card make a gracious first evening at anchor. For the flight home, grilled fish from Exuma Sound, conch fritters and a slice of coconut tart bring the holiday to a delicious close.
Harbour Island and North Eleuthera (MYEH / ELH)
Harbour Island has no runway of its own, so guests fly into North Eleuthera and cross to Dunmore Town by water taxi in a few minutes. The island's social season runs from Thanksgiving to Easter, and the most elegant house parties of the Bahamas take place here over Christmas and New Year. Two FBOs, Sovereign Atlantic Aviation and White Crown Aviation, welcome private aircraft at North Eleuthera.
Catering for Harbour Island often reflects its relaxed sophistication: lobster salad and grilled lobster tails in season, ceviche-style conch, tropical fruit, French pastries and champagne subject to local rules. Restaurant pick-ups from Harbour Island can be coordinated on request, with the boat crossing built into the timing. Nearby Spanish Wells, a close-knit fishing community, is famous for its spiny lobster, which our team can feature during the season.
On Harbour Island, the crossing from the airfield takes minutes. Our role is to make the food feel just as effortless as the water taxi.

Eleuthera: Governor's Harbour (MYEM / GHB) and Rock Sound (MYER / RSD)
Central and southern Eleuthera are quieter, with long Atlantic beaches, calm Caribbean-side bays and charming settlements. Governor's Harbour (MYEM / GHB) is the gateway to the hillside town of Governor's Harbour and the villas of central Eleuthera, while Rock Sound (MYER / RSD) serves the rural south, Cape Eleuthera and its marina. Here, sharing platters, salads and chilled dishes that travel well in the warmth are the most popular choices.
Eleuthera is also the island of the sugarloaf pineapple, celebrated each June at the Pineapple Festival in Gregory Town. Fresh pineapple, pineapple tarts and pressed juices are lovely additions to any menu from these airports when local supply allows.

Busy-Season Guide to VIP Inflight Catering at Exuma (MYEF / GGT)
Exuma International is a compact island airport, and its busy months follow the yachting and winter-sun calendar: Christmas and New Year, the January to April cruising season, Easter and the April regatta in George Town. Several jets often arrive on the same day, and many passengers transfer straight to yachts or private islands, so timing matters more than usual. Order three days ahead in peak weeks, confirm passenger and crew numbers once the yacht or villa schedule is fixed, and agree the hand-over time with your handler. Chilled boxes, cold seafood platters and items packed for a boat transfer work best here.
Event | When | Where |
National Family Island Regatta | April | Elizabeth Harbour, George Town |
Winter yachting season | December to April | Elizabeth Harbour and the Exuma Cays |
Christmas and New Year holidays | Mid-December to early January | Great Exuma and private islands across the Exumas |
Easter and spring break | March or April (varies) | Great Exuma and the cays |
Atlantic hurricane season | June to November | The Bahamas |
National Family Island Regatta at Exuma (MYEF / GGT): April
The Bahamas' best-known sailing event brings traditional wooden sloops, built and crewed by Bahamians, to race in Elizabeth Harbour, with shore parties and music in George Town all week. Visitors, sponsors and returning islanders fill the town, and the whole town is at its liveliest. Book catering well in advance, plan for groups who want relaxed sharing platters, and allow for busy roads on race days when arranging delivery to the handler. Grilled fish, conch fritters and island sides are available on request.
Regatta and holiday dates shift from one year to the next, so confirm the current timings with our team when you order.
Things to do around Exuma (MYEF / GGT)
Exuma is a chain of more than 300 cays and islets, and most visitors spend their days on the water. Boat trips run to Big Major Cay to see the swimming pigs, to Thunderball Grotto for snorkelling inside a limestone cave, and to sandbars that appear at low tide. The Exuma Cays Land and Sea Park protects reefs and wildlife further north. On Great Exuma, Tropic of Cancer Beach and Coco Plum Beach are long and quiet, and Stocking Island across Elizabeth Harbour has walking trails, beach bars and calm anchorages. Bonefishing on the flats is a major draw.
Culture and heritage near Exuma (MYEF / GGT)
George Town grew around Elizabeth Harbour, a deep natural anchorage used by sailors for centuries. The small town keeps colonial-era buildings such as its pink and white government administration building and St Andrew's Anglican Church above Lake Victoria. Loyalist settlers arrived after the American Revolution, and their legacy shows in family names and ruins of old cotton plantations across the island. Straw work and boatbuilding remain living crafts, celebrated each spring at the regatta.
Also nearby: Rock Sound (MYER / RSD)
Rock Sound International Airport serves South Eleuthera, the quietest and most rural end of the island. The settlement of Rock Sound, set on a wide bay, is the area's commercial centre, while Cape Eleuthera, with its marina and resort community, and the long beaches of the southern tip attract sailors, anglers and villa guests. Business aviation flights are mostly leisure and owner traffic from Florida and the US East Coast, with yachtsmen and marine researchers adding to the mix. Activity concentrates from December to April, with lighter traffic through summer and autumn.
The Ocean Hole in Rock Sound is an inland blue hole linked to the sea, where tropical fish swim close to the surface; steps lead down for a swim. South of the settlement, Lighthouse Beach at the island's southern tip offers pink sand, dunes and clear water at the end of a rough track. Cape Eleuthera is the base for sport fishing in deep Exuma Sound, where tuna, mahi-mahi and wahoo run, and for diving and snorkelling on nearby reefs. Bonefishing on the southern flats, cave exploration, birdwatching and quiet beach days on the Caribbean side make up the rest of a visit. Sunsets over the Exuma Sound are a highlight.
