Mini Meals on Private Jets: Small-Plate Catering Trends Passengers Love

Mini meals on private jets have become one of the most requested formats in VVIP inflight catering. Instead of a single large plate served at a fixed moment, passengers now often prefer a sequence of small, beautifully finished dishes that arrive when they want them: a few bites of smoked salmon after take-off, a warm miniature main during a meeting, a tasting of cheeses before landing. The format suits the way people actually fly today, with work, rest and conversation sharing the same cabin.

At Global Diners, we prepare inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, from Munich (EDDM / MUC) to Copenhagen (EKCH / CPH). This guide looks at why small plates appeal to passengers, how to build a tasting-style service from the Global Diners menu, which dishes travel best in miniature and how crews can serve them with ease on every sector length.

Why small plates suit the modern cabin

Business aviation passengers rarely follow a restaurant timetable. A chief executive may want to read through documents after take-off and eat later, while a family on the same aircraft would rather graze throughout the flight. Small plates give everyone that freedom. Each portion is complete in itself, so the crew can serve one course or six, in any order, without the cabin feeling like a formal dining room.

Small plates also make the most of a compact galley. Miniature portions plate quickly, reheat evenly and leave space on the tray for garnish and presentation. For short sectors, two or three bites can replace a full meal elegantly; for longer flights, a tasting sequence keeps the service lively from departure to arrival.

  • Flexibility: passengers eat when they wish, and the crew adapts the rhythm to the mood of the cabin.

  • Variety: a single order can cover seafood, meat, vegetarian and sweet options without excess.

  • Lightness: smaller portions leave passengers comfortable and rested on arrival.

  • Presentation: miniature dishes look refined on fine china and are easy to finish beautifully in flight.

Building a tasting menu from the Global Diners menu

Global Diners works with one menu, the Global Diners menu, and every request receives a dedicated quote. Small plates fit naturally into this approach: our specialised team selects dishes from the menu card and prepares them in miniature portions, labelled and packed for the galley. You simply tell us the number of passengers, the flight time and the style of service you have in mind.

Moment in flight

Small-plate idea

How Global Diners prepares it

After take-off

Cold canapés and a welcome bite

Smoked salmon blinis, caviar on crème fraîche, vegetable crudités, all ready to plate

Mid-flight

Warm miniature mains

Small portions of fish, poultry or beef with separately packed sauces and reheating guidance

Light interlude

Salad or soup in a cup

Seasonal salads in individual bowls, soups packed for gentle reheating

Before landing

Cheese and sweet bites

A trio of cheeses, petits fours, macarons and fresh fruit

Every item carries allergen labelling, so the crew always knows exactly what is in each bite. Sauces and dressings are packed separately to keep textures crisp, and hot items come with clear reheating guidance. Halal, kosher and alcohol-free menus are available, and vegetarian small plates can be added to any order.

Dishes that shine in miniature

Not every dish becomes better when it becomes smaller. The best mini meals keep their flavour and texture after a few hours in a chilled galley and a few minutes of reheating. Our team favours recipes with clear, generous flavours and components that can be assembled at the last moment by the crew.

  • From the sea: smoked salmon, prawns, scallops and caviar, served chilled with lemon, herbs and blinis.

  • From the land: slices of beef fillet, chicken supreme, lamb noisettes, each with a small vegetable garnish.

  • Vegetarian: burrata with tomatoes, grilled vegetable tartlets, mushroom risotto in a small bowl.

  • Cheese: two or three cheeses with fruit bread and chutney, a calm way to close the meal.

  • Sweet: mini tarts, éclairs, macarons, chocolate truffles and seasonal fruit.

Regional touches make small plates even more memorable. On departures from Munich, a miniature Bavarian board with pretzel bites and Obatzda adds a local note; from Copenhagen, miniature open sandwiches in the Danish smørrebrød tradition, with herring, prawns or roast beef on rye, turn a short hop into a Nordic lunch. Restaurant pick-ups can also be coordinated on request when passengers have a favourite address.

A small plate is a promise of more to come. The art lies in the rhythm, not the size of the portion.

Serving small plates with ease

A tasting service is relaxed for the crew when the order is organised around the cabin rather than around the kitchen. We recommend grouping each course in its own labelled container, listing the intended serving order and noting any dishes that need warming. This way, the crew can follow the flow of the flight and adjust it to the passengers' mood without searching through the galley.

  1. Email order@globaldiners.com with the aircraft registration, airport, date, delivery time and passenger count.

  2. Mention that you would like a small-plate or tasting-style service, and the approximate number of courses.

  3. Add dietary needs, allergies and VIP preferences in the same message.

  4. Order 24 hours ahead, so our team can prepare and label each course with care.

  5. Receive your dedicated quote and a written confirmation from our specialised team.

For crews who want to go further, our guide to galley catering on popular business jets explains how different galley layouts influence presentation, and catering weight and flight efficiency shows why well-portioned orders are also lighter orders.

Small plates on every sector length

The format adapts easily to the length of the flight. On a one-hour hop, three cold bites and a sweet finish are often enough. On a three-hour business sector, a tasting of five or six courses can replace a traditional lunch. On long-range missions, small plates work well between two main services, keeping passengers comfortable without a heavy meal in the middle of the night.

Global Diners tip

Under 2 hours

From our own kitchens at Paris Le Bourget (LFPB / LBG) and Nice (LFMN / NCE), we deliver planeside, and at Madrid (LEMD / MAD) we deliver at the FBO. Elsewhere, our team coordinates the delivery with your FBO or handler, with the same menu and the same standards at every airport.

Mini meals for crews, too

Small plates are not only for passengers. Crew meals built from the same principle let pilots and cabin crew eat lightly and at their own pace during long duty days. A few well-balanced portions, clearly labelled, are easier to fit around the service than a single large tray. Our guide to crew catering for layovers and multi-day trips covers this in more detail.

The world's largest trade fair for construction machinery fills the Riem exhibition grounds and draws executives from every continent for a week. Corporate jets often arrive in convoy for board-level visits, and departures bunch on the closing days. Hearty Bavarian options such as Leberkäse rolls or pretzel sandwiches, combined with lighter salads and fruit, suit long exhibition days and the journey home.

Trade-fair cycles and festival dates in Munich are set anew each year, so please confirm timings with our team before you finalise your order.

Dining and shopping near Munich (EDDM / MUC)

The Hofbräuhaus traces its brewing back to 1589, while Dallmayr, a delicatessen founded in 1700, is a destination for coffee, chocolates and fine foods. Maximilianstraße and Theatinerstraße hold the luxury fashion houses, the Fünf Höfe arcades mix design and art, and Kaufingerstraße is the main shopping street.

Local flavours for flights from Munich (EDDM / MUC)

A Brotzeit platter – cold cuts, Leberkäse, radishes, pickles, cheese and rye bread – is the traditional Bavarian snack and works on any sector length. Obatzda, a spiced spread of ripe Camembert, butter and paprika, is served with soft pretzels (Brezn), which are best collected fresh on the morning of departure. Weißwurst, the white veal sausage eaten with sweet mustard and pretzel, is traditionally a morning dish and can be provided for a Bavarian-style breakfast that is simple to reheat. Schweinsbraten, roast pork with crackling and bread dumplings, and Schweinshaxe are table dishes better enjoyed on the ground, though roast pork slices served cold are a good alternative. Alpine cheeses such as Bergkäse from the Allgäu add a strong cheese course. For dessert, Apfelstrudel, Dampfnudeln and Bavarian cream are traditional, and Munich's bakeries produce excellent seasonal cakes, including plum cake in late summer. Restaurant pick-up in Munich is available on request.

Also on the Global Diners network: Copenhagen (EKCH / CPH)

Copenhagen Airport sits on the island of Amager, close to the city centre and linked by bridge to Malmö in southern Sweden. Private passengers come for business in shipping, pharmaceuticals, green energy and design, and for the Danish capital's restaurant scene, which has made it a leading destination for food travel. The airport also serves the Øresund region as a whole. Traffic is steady year-round, rising in summer when the long days bring leisure visitors and events, and during the city's fashion weeks.

Nyhavn's colourful harbour, the Tivoli Gardens, the royal palace at Amalienborg and the Little Mermaid statue are classic sights, and canal tours give a relaxed overview. In summer, locals swim at harbour baths and at Amager Strand, close to the airport. North of the city, the Louisiana Museum of Modern Art sits by the sea at Humlebæk, and Kronborg Castle at Helsingør is the setting of Shakespeare's Hamlet. CopenHill, a ski slope on a power plant roof, offers year-round skiing and hiking with views. Cycling is the easiest way to explore, with bike lanes throughout the city.
