Private Jet Catering Key West (KEYW / EYW): Florida Keys Seafood Menus

Private jet catering in Key West is a celebration of the sea. At the very end of the Overseas Highway, closer to Havana than to Miami, Key West lives on stone crab claws, pink shrimp, spiny lobster, yellowtail snapper and the most famous pie in Florida. Business jets bring families to waterfront homes, anglers to the flats and reefs, couples to sunset celebrations and friends to the island's festivals, and every one of those flights deserves a menu that tastes of the Keys.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including Key West (KEYW / EYW), Miami Executive (KTMB / TMB) and Miami (KMIA / MIA). This guide is dedicated to Florida Keys seafood menus: what is in season, what travels well and how to order with confidence.

Key West (KEYW / EYW): the southernmost point of the continental United States, and a capital of Florida Keys seafood.

Flying into Key West

Key West International sits on the south-east shore of the island, a few minutes from Duval Street, the Old Town and the marinas. Its compact size makes arrivals and departures relaxed and personal, and many guests are at their hotel or waterfront home within minutes of landing. Flights come from Miami, Palm Beach, Naples and Fort Lauderdale for short island escapes, and from New York, Chicago, Texas and Canada for longer winter stays.

For catering, the routine is simple: our specialised team confirms every detail in writing, our kitchen prepares each item fresh, and delivery is coordinated with your FBO at the time agreed for your departure. Many itineraries pair Key West with Miami-Opa Locka (KOPF / OPF) or Naples (KAPF / APF), and sending the full trip in one request lets our team plan each leg.

  • Island escapes: light seafood platters, tropical fruit and chilled drinks for the short hop from South Florida.

  • Fishing trips: generous breakfast boxes and hearty lunches for anglers heading to the flats and the reef.

  • Family holidays: relaxed menus with something for every age, from shrimp to key lime treats.

  • Celebrations: festive platters for birthdays, weddings and sunset parties.

  • Return flights north: complete services for longer sectors to the Northeast, the Midwest and Canada.

Florida Keys seafood through the seasons

The Keys calendar is written by the sea. Stone crab season opens on 15 October and runs until early May, and the sweet, meaty claws, served chilled and cracked with a mustard sauce packed separately, are the signature of a winter flight from Key West. Florida spiny lobster is in season from August to March, delicious grilled, in salads or in a light lobster roll. Key West pink shrimp, prized for their sweetness, are available through much of the year and make a classic chilled shrimp cocktail.

Local fish complete the picture: yellowtail snapper, hogfish, mahi-mahi and grouper, grilled with citrus or blackened with Caribbean spices, travel beautifully when sauces are packed apart. Conch fritters, a Keys tradition, are best enjoyed on the ground, so on board we suggest conch-style chowder in a thermal container or a citrus ceviche of local fish, prepared freshly and kept perfectly chilled.

In the Keys, the best menu is the one the sea writes for you: stone crab in winter, lobster in late summer and key lime pie all year.

Key lime pie and Cuban flavours

No flight from Key West is complete without key lime pie. Made with the small, fragrant limes that gave the Keys their name, it travels beautifully chilled, by the slice or as individual tartlets, with whipped cream packed separately. Mango, papaya and coconut desserts add a tropical note, and fresh tropical fruit platters are always welcome on a warm afternoon.

Key West also carries a strong Cuban heritage, and Cuban sandwiches, pressed with roast pork, ham, Swiss cheese and pickles, make an excellent lunch for the short hop to Miami. A café con leche or a sweet Cuban coffee is a lovely way to start a morning departure. Caviar, smoked salmon, cheese and pastries from the Global Diners menu card complete any menu, and wine and champagne can be added subject to local rules.

The Key West year

Winter is the high season, from December to April, when warm, dry weather brings visitors from across North America and Europe, and the stone crab season is at its best. January welcomes a celebrated food and wine festival, April the Conch Republic Independence Celebration with its playful parades, and May a songwriters festival. July is the month of Hemingway Days, honouring the writer who lived on the island, and late July opens the lobster season. October ends with Fantasy Fest, the island's famous costume carnival.

Summer and early autumn are calmer and warmer, with lush green islands, flat seas for fishing and quieter beaches. Our team keeps timings flexible during this season and follows any change of schedule closely with your handler. For the high points of the year, ordering a little earlier than the usual 24 hours keeps the full menu choice open.

Menus for every passenger

Beyond seafood, the Global Diners menu includes grilled meats, fresh salads, vegetarian dishes and desserts, so every passenger finds something to enjoy. Halal, kosher, gluten-free and alcohol-free menus are available, and every item is labelled for allergens, which matters especially with shellfish. Hot dishes come with reheating guidance and sauces are packed separately. Our article on private jet catering at top US airports shows how the same routine works across the United States, and our guide to winter destinations for private jets suggests other warm escapes.

For crews staying overnight on the island, crew meals can be added to the same order, and our guide to crew catering on layovers suggests balanced options for long duty days.

Things to do around Key West (KEYW / EYW)

Key West is small enough to explore on foot or by bicycle, with Duval Street, the Southernmost Point buoy and the nightly sunset celebration at Mallory Square as the classic stops. The surrounding waters are ideal for snorkelling, diving, sailing and sport fishing, with the only living coral barrier reef in the continental United States offshore. Fort Zachary Taylor Historic State Park has a pleasant beach and a Civil War-era fort. Seaplane and boat trips reach Dry Tortugas National Park, and kayak tours explore the mangrove backcountry. Further up the Keys, Bahia Honda State Park has some of the finest natural beaches in the chain, and the Seven Mile Bridge makes a memorable drive.

Culture and heritage near Key West (KEYW / EYW)

The Ernest Hemingway Home and Museum, with its six-toed cats, is the island's most famous landmark, and the Little White House was President Harry Truman's winter retreat. The Key West Lighthouse, the Shipwreck Museum and the Audubon House recall the island's maritime past. Old Town's wooden 'conch houses' with wide porches and shuttered windows give the historic district its distinctive character.

Also nearby: Miami Executive (KTMB / TMB)

Miami Executive Airport, in Kendall in south-west Miami-Dade County, is a general-aviation airport that suits passengers heading to Coral Gables, Pinecrest, South Miami and Key Biscayne. It also offers a convenient start for the drive to the Florida Keys and Homestead. Business jet flights bring Latin American executives, winter residents and visitors attending Miami's major events. Many flights connect with the Bahamas, the Caribbean and Central and South America. The winter season from December to April is the liveliest, boosted by Art Basel in December and the spring motorsport and tennis calendar.

From Kendall it is easy to reach both Miami's beaches and the natural parks to the south. Key Biscayne offers calm water and lighthouse views at Bill Baggs Cape Florida State Park, while South Beach lies across the bay to the north-east. Everglades National Park and Biscayne National Park, mostly underwater, lie within an hour, with airboat trips, kayaking and snorkelling. Zoo Miami is close to the airport, and Fairchild Tropical Botanic Garden in Coral Gables is a peaceful morning out. Golf, deep-sea fishing and day trips to the Florida Keys round out the options.
