Private Jet Canapés: How to Order Hors d'Oeuvres On Board
Private jet canapés are the most sociable moment of any flight. A tray of beautifully made hors d'oeuvres, served with a glass of champagne or a fresh juice soon after take-off, sets a warm tone for the journey, welcomes guests to the cabin and gives the crew a graceful first service. They are just as useful at the end of the day, when a light bite is more welcome than a full dinner.
Global Diners prepares inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, from Milan Linate (LIML / LIN) and Munich (EDDM / MUC) to Dubai (OMDB / DXB). This guide explains how to order canapés for a business jet: how many pieces to plan, which bites travel best, how they are packed and how the crew can present them so they look as good at 40,000 ft as at a reception on the ground.

When canapés work best on board
Canapés are not only for celebrations. They suit many moments of business aviation, and choosing the right moment shapes the order. On a short sector they can replace a meal entirely; on a long flight they become the elegant opening of a longer service.
Welcome service: a few bites with a drink after take-off, before lunch or dinner is served.
Short hops: on flights of an hour or less, a generous canapé selection is often more practical than a plated meal.
Evening returns: after a long day of meetings, light bites and a cheese plate replace a heavy dinner.
Celebrations: birthdays, signings, weddings and anniversaries, with champagne subject to local rules.
Aircraft on display: customer visits at shows and conventions, where guests step on board for a few minutes.
How many canapés to order per passenger
Our team does not use a fixed formula, because the right quantity depends on the moment and the passengers. A welcome service before a meal needs only a few pieces per guest, while a canapé service that replaces lunch or dinner calls for more variety and a few more substantial bites. The table below shows how our team thinks about each case.
Canapé moment | What guests expect | How Global Diners prepares it |
Welcome before a meal | A light, elegant first taste | A small selection of cold bites, ready to serve straight from the chiller |
Canapés instead of a meal | Variety and a feeling of abundance | A wider selection with warm bites, reheating guidance and something sweet |
Evening return | Something light and comforting | Savoury bites, cheese and fruit, served with tea or a nightcap subject to local rules |
Celebration on board | A festive presentation | Champagne-friendly bites, caviar and petits fours, labelled for allergens |
Sharing the passenger count, flight time and the moment you have in mind with order@globaldiners.com is the simplest way to receive the right quantity. Our team then proposes a selection from the Global Diners menu and sends a dedicated quote.

Canapés that travel beautifully
Not every reception bite suits the cabin. The best canapés for a business jet hold their shape, keep their texture for several hours in the cold chain and can be presented quickly in a small galley. Crisp bases are kept apart from moist toppings until the last moment, and delicate garnishes travel in separate pots so the crew can finish each piece just before serving.
Cold classics: smoked salmon on blinis with crème fraîche, beef tartare on toasted brioche, tuna tataki with sesame, goat's cheese and fig on crisp bread.
Caviar moments: caviar served simply with blinis and crème fraîche, a timeless choice on the Global Diners menu card.
Vegetable bites: tomato and basil on crostini, marinated vegetable skewers, hummus or guacamole cups and cucumber rolls.
Warm bites: mini quiches, gougères, arancini, chicken satay or lamb kofta, each with reheating guidance for the galley.
Sweet finish: macarons, mini tarts, chocolate truffles and fresh fruit skewers.

A good canapé is one perfect bite: the right size, the right texture and a flavour that the cabin cannot quieten.
Flavour matters at altitude too. Cabin air softens salt and sweetness, so canapés built on umami, herbs, citrus and a little spice keep their character. Our guide to private jet wine pairing suggests which champagnes and wines go best with these bites, always subject to local rules.

Packing, labelling and the cold chain
Every Global Diners canapé selection follows HACCP principles and travels in the cold chain from our kitchen to your aircraft. Pieces are arranged in shallow trays that fit standard galley chillers, with each component labelled for allergens. Warm bites come with clear reheating guidance, and sauces, dips and garnishes are packed separately so nothing softens before service.
Galley space varies a great deal between a light jet and a long-range aircraft. Sharing the aircraft type helps our kitchens choose tray sizes and quantities that suit your galley, as explained in our guide to private jet galleys. Thoughtful quantities also support catering weight and flight efficiency.

Presentation tips for the crew
Canapés are as much about presentation as about taste, and a few minutes in the galley make all the difference. Our team suggests these simple gestures for a service that looks effortless.
Take cold canapés out of the chiller a few minutes before serving, so their flavours open.
Add delicate garnishes, herbs and sauces at the very last moment.
Serve on the aircraft's own china or slate, with linen napkins and small cocktail forks for softer bites.
Offer a few pieces at a time and refresh the tray, rather than presenting everything at once.
Keep a small plate aside for the crew, ordered as a separate line on the request.
Halal, kosher and alcohol-free menus are available, and every item is labelled for allergens. Planeside delivery is made by our own kitchens at Paris (LFPB / LBG) and Nice (LFMN / NCE); elsewhere, delivery is coordinated with your FBO or handler. For events with many guests, our article on conferences and summits in Nice shares more ideas. The Global Diners client portal is coming very soon. It is designed to bring the Global Diners menu, order requests, confirmations and documents into one space for crew, operations and finance. Until it opens, every request goes through order@globaldiners.com.
Canapés with a sense of place
Canapés are a lovely way to bring the destination on board. From Milan, crews often ask for bresaola rolls, parmesan crisps and mini arancini in the spirit of the aperitivo. From Munich, Obatzda on pretzel bites and smoked trout on rye bring a Bavarian touch. On the Riviera, pissaladière, socca and tapenade toasts recall Nice, while flights from Dubai welcome dates, labneh and spiced lamb bites. Each request receives a dedicated quote alongside the Global Diners menu.

Local flavours for flights from Milan Linate (LIML / LIN)
Lombard cooking leans on butter, rice and slow braising rather than olive oil and tomato. Risotto alla milanese, coloured gold with saffron, is often paired with ossobuco, veal shank braised with white wine and finished with gremolata. The cotoletta alla milanese, a bone-in veal chop breaded and fried in butter, is the city's other signature, and it is excellent served cold – sliced and plated, or tucked into a soft panino with rocket and tomato. From the Valtellina comes bresaola, air-dried beef that works well as a carpaccio with lemon, olive oil and shaved Grana Padano. Gorgonzola, Taleggio and Grana Padano all come from the surrounding plains and make a strong cheese course with mostarda di Cremona, the region's candied fruit in mustard syrup. Panettone was born in Milan and is available year-round from the city's pastry shops, though it is most closely linked to Christmas; slices toasted with butter suit a winter breakfast on board. Franciacorta, the bottle-fermented sparkling wine from the hills near Brescia, is Lombardy's answer to Champagne, while Milan's aperitivo culture gives Campari and its signature cocktails their home. Non-alcoholic options include Italian blood-orange juice and chinotto. Pick-up from a chosen Milanese restaurant or pasticceria is available on request.

Bavarian food is hearty: Weisswurst with sweet mustard and pretzels for late breakfast, roast pork with dumplings, and Obatzda cheese in beer gardens under chestnut trees. The Hofbräuhaus traces its brewing back to 1589, while Dallmayr, a delicatessen founded in 1700, is a destination for coffee, chocolates and fine foods. Maximilianstraße and Theatinerstraße hold the luxury fashion houses, the Fünf Höfe arcades mix design and art, and Kaufingerstraße is the main shopping street.
