Swiss Cheese on Private Jets: Serving Gruyère, Emmentaler and Alpine Platters On Board

Swiss cheese on private jets is one of the simplest pleasures of Alpine flying. A board of Gruyère, Emmentaler, Tête de Moine and Raclette du Valais, served with walnut bread, pears and a little chutney, says more about Switzerland than any brochure. For flights from Sion (LSGS / SIR), Lugano (LSZA / LUG), Geneva (LSGG / GVA) and Zurich (LSZH / ZRH), a well-chosen cheese platter is often the most appreciated course of the journey.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including the Swiss airports. Cheese is on the Global Diners menu card, and this guide explains which Swiss cheeses to choose, how to present them, how to serve them at the right temperature and how to pair them for an Alpine flight.

The great Swiss cheeses for the cabin

Switzerland produces hundreds of cheeses, many with protected designation of origin. A handful are particularly well suited to private aviation because they slice cleanly, keep their texture and offer a range of flavours from mild to intense.

Cheese

Character

Global Diners serving suggestion

Le Gruyère AOP

Firm, nutty, slightly sweet

Thin slices or batons on a board

Emmentaler AOP

Mild, with large holes

Slices for breakfast or sandwiches

Tête de Moine AOP

Spicy, herbal

Small cubes with fruit and nuts

Vacherin Fribourgeois AOP

Supple, rich

Wedges with walnut bread

Sbrinz AOP

Seasonal specialities add interest: Vacherin Mont-d'Or appears from autumn to spring and is a winter favourite, while alpine cheeses made in summer pastures, such as L'Etivaz, bring a taste of the high meadows.

Building an Alpine cheese platter

A balanced board usually combines three to five cheeses of different textures and intensities, arranged from mildest to strongest. Our team suggests:

  1. Start with a mild cheese such as Emmentaler or a young Gruyère.

  2. Add a supple cheese, such as Vacherin Fribourgeois, for creaminess.

  3. Include a striking presentation, such as Tête de Moine rosettes.

  4. Finish with an aged or spicy cheese, such as Sbrinz or Appenzeller.

  5. Complete the board with walnut or rye bread, pears, grapes, dried apricots from the Valais, nuts and fruit chutney.

The best Swiss cheese board is a small journey through the Alps: from soft valley flavours to the deep notes of the high pastures.

Temperature, slicing and presentation

Cheese tastes best at cabin temperature rather than straight from the chiller. Our kitchens cut and arrange each board before delivery, wrap it to keep it fresh and label it for allergens. On board, the crew simply removes the board from the chiller a little before service, so the flavours open up, and unwraps it at the table.

  • Pre-cut on the ground: no knives or crumbs needed in the cabin.

  • Rosettes ready to serve: Tête de Moine is shaved in our kitchen and packed carefully.

  • Breads apart: crisp breads and crackers packed separately so they stay crunchy.

  • Fresh cabin aromas: our team favours cheeses with gentle aromas for small cabins, with stronger washed rinds available on request.

Quantities are easy to plan: a cheese course after a main meal needs only a few slices per guest, while a cheese board served as a light meal on its own calls for a more generous selection with extra bread, fruit and charcuterie such as Valais dried beef. Tell our team how the board will be used, as a course, a snack or the main event, and we will size it accordingly. Leftover cheese keeps well in the chiller for the return leg, wrapped and labelled.

Cheese also suits the crew. A small board with fruit and bread is a calm, satisfying snack on long duty days, and it can be prepared as separate crew portions so the passenger platter stays untouched.

For breakfast flights, a simple Swiss plate with Emmentaler, Gruyère, butter, Bircher muesli and fresh bread is a calm and generous start to the day.

Raclette and warm cheese dishes at altitude

Raclette and fondue are the heart of Swiss winter cooking. A full fondue is not suited to the cabin, but its spirit can travel: raclette slices melted over small potatoes with cornichons and pickled onions can be prepared for gentle reheating, and gratins, cheese tartlets and croûtes au fromage reheat well in the galley oven. These warm dishes are particularly welcome on ski-season departures.

Pairings and the Alpine flight

Swiss wines are rarely exported, which makes them a lovely discovery on board. Fendant, Petite Arvine and Cornalin from the Valais, or Merlot from Ticino, pair beautifully with Alpine cheeses and can be added subject to local rules. Apple juice from Swiss orchards, herbal teas and sparkling water are delicious alcohol-free companions.

Cheese boards are a staple of winter flights to the mountains. Our article on winter destinations by private jet covers the ski season, and our wine pairing guide explores pairings further. Zurich departures for the World Economic Forum are covered in our Davos catering guide.

February school holidays at Sion (LSGS / SIR): February

School breaks in Switzerland, France, the United Kingdom and the Benelux countries are staggered through February, which keeps the Valais resorts full for most of the month. Sion receives a steady flow of family groups heading up to the slopes, with turnarounds stacking up on Saturdays and Sundays. A 48 to 72 hour order lead keeps menus flexible. Hearty breakfasts, hot chocolate service, children's snack boxes and a light raclette-style board work well for short return legs to northern Europe.

Festival and holiday dates in the Valais move a little each year, so please check the exact timing with our team when you send your order.

Local flavours for flights from Sion (LSGS / SIR)

Raclette du Valais, a protected cheese, is traditionally melted and scraped over potatoes; on board it works well as slices on a cheese board or melted for reheating on longer flights. Valais dried meat, a protected air-dried beef, Valais rye bread with its own designation, and dried sausages complete a classic Valais plate. Cholera, a local pie of potatoes, leeks, apples and cheese, is a hearty hot dish, and Valais apricots, at their best in July and August, appear in tarts and as fresh fruit. Abricotine, a protected apricot eau-de-vie, is the regional digestif. Our kitchens prepare each order, and pick-up from resort and valley restaurants is available on request.

Also on the Global Diners network: Lugano (LSZA / LUG)

Lugano Airport serves Ticino, Switzerland's Italian-speaking canton, and its main city, an important centre for private banking, wealth management and commodity trading. Business travellers fly in for meetings in Lugano's financial district, while leisure visitors come for Lake Lugano, lakeside villas and the nearby shores of Lake Como across the Italian border. Milan is within easy reach by road, making the airport a discreet alternative for northern Italy. The airport sits in a narrow valley surrounded by mountains, and summer is the busiest leisure season.

Lake Lugano is the centre of life here: take a boat to the village of Gandria or to Morcote with its arcaded lakefront, or walk the Sentiero di Gandria olive trail. Funiculars climb Monte San Salvatore and Monte Brè for views across the lake and Alps, and a rack railway serves Monte Generoso. Parco Ciani offers lakeside gardens in the city, and Swissminiatur in Melide suits families. Golf is available in the Malcantone, and Locarno, Ascona and Lake Maggiore are within easy reach. Milan is close enough for a shopping or opera day.
