Afternoon Tea on a Private Jet: Menu and Service Etiquette from Manchester (EGCC / MAN) to Birmingham

Afternoon tea on a private jet is one of the most charming services a cabin can offer. A tiered stand of finger sandwiches, warm scones with clotted cream and jam, delicate pastries and a pot of well-brewed tea turns a mid-afternoon flight into a small celebration. It suits a family returning from a weekend away, a birthday on board or a business team flying home after a long day of meetings, and it is wonderfully practical, because almost everything is served cold or at room temperature.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports. This guide shares the menu, the etiquette and the practical details of a perfect afternoon tea at altitude, with examples from Manchester (EGCC / MAN), Birmingham (EGBB / BHX) and Farnborough (EGLF / FAB), where the tradition is at home, and from our own kitchens at Paris (LFPB / LBG) and Nice (LFMN / NCE). It pairs well with our guide to herbal teas and infusions on board.

A short history of a very British pleasure

Afternoon tea is usually traced to the 1840s, when Anna, Duchess of Bedford, asked for tea, bread and butter and cake in the late afternoon to bridge the long gap between lunch and a late dinner. The habit spread through society and became an elegant social ritual, later embraced by the great hotels. Today it is enjoyed far beyond Britain, and passengers from the Gulf, Asia and the Americas often request it as a treat on board.

Afternoon tea should not be confused with high tea, which was historically a more substantial evening meal served at a table. On a private jet, our team can prepare either: the classic tiered afternoon tea, or a heartier version with savoury pies, quiche and a warm dish for a later flight.

The classic menu, tier by tier

A traditional afternoon tea follows a simple order, from savoury to sweet. Our kitchens prepare each element so that it travels well and looks beautiful when the crew assembles the stand:

Tier

Traditional content

How Global Diners prepares it

Bottom: sandwiches

Cucumber, egg mayonnaise and cress, smoked salmon, coronation chicken, ham and mustard

Crustless finger sandwiches, boxed by filling and labelled for allergens

Middle: scones

Plain and fruit scones with clotted cream and strawberry jam

Packed separately with cream and jam in small sealed pots

Top: pastries

Éclairs, fruit tarts, macarons, Victoria sponge and lemon drizzle

Chilled and protected in rigid boxes to keep their shape

Tea

English breakfast, Earl Grey, Darjeeling, Assam, green and herbal teas

Loose-leaf or premium tea bags, with milk and lemon packed separately

Vegetarian, vegan, gluten-free and dairy-free versions are prepared on request, and halal and kosher afternoon teas are also available. Our articles on gourmet sandwiches and desserts that travel well share more ideas.

Scones: cream first or jam first?

No afternoon tea is complete without a gentle debate. In Devon, the custom is to spread clotted cream first and top it with jam; in Cornwall, jam goes first and cream on top. Cabin crew can simply offer both and let each passenger choose. Scones are at their best slightly warm, so on aircraft with an oven they can be warmed for two or three minutes; on light jets they are perfectly enjoyable at cabin temperature.

A good afternoon tea is unhurried: tea poured with care, scones shared and conversation flowing above the clouds.

Serving afternoon tea in the cabin

Presentation is half the pleasure. These simple steps help the crew create a memorable service:

  1. Warm the teapot with hot water before brewing, and let black tea steep for three to five minutes.

  2. Arrange sandwiches on the bottom tier, scones in the middle and pastries on top.

  3. Offer milk, lemon and sugar separately, and pour milk after the tea unless the passenger prefers otherwise.

  4. Serve sandwiches first, then scones, then pastries, refreshing the tea between courses.

  5. Keep a second pot ready for guests who prefer a herbal or green tea.

If the aircraft does not carry a tiered stand, a pretty platter works beautifully. Champagne can be added for a celebration, subject to local rules, and our article on wine and champagne pairing suggests matches for pastries.

Regional touches across our network

Afternoon tea adapts gracefully to each destination. In the north of England, passengers may enjoy Eccles cakes or Yorkshire parkin; around Birmingham, a slice of Bakewell tart from the nearby Peak District. In France, our Paris and Nice kitchens offer madeleines, financiers, tarte au citron and French macarons. In the Gulf, saffron and cardamom cakes and Arabic coffee sit beautifully beside the tea, and in Asia, matcha pastries and jasmine tea make an elegant variation.

Many London departures enjoy afternoon tea on the way to the Riviera or the Alps; our London airports guide covers the capital's business aviation airports.

The Manchester and the North West Event Year for Private Jet Catering (EGCC / MAN)

Manchester is the main business airport of northern England, serving the city's finance, media and life-science sectors as well as two of the world's best-supported football clubs. Highlights come through the year: football weekends and European nights from August to May, the Grand National at Aintree in April, summer festivals and Test cricket, and the long run of Christmas markets. On big match days, many business aircraft arrive before kick-off and depart after the final whistle. Order earlier than the standard 24 hours for those flights, confirm passenger numbers early, agree delivery timing with the handler, and choose hot, filling meals for late departures or compact trays for daytime business trips.

Agree a post-match delivery slot with the handler.
