Brazil Carnival season private jet catering is about three cities, three styles of celebration and one calm standard on board. In Rio de Janeiro the samba schools parade through the Sambadrome; in Salvador the trios elétricos carry music through the streets for days on end; in Recife and neighbouring Olinda, frevo, maracatu and giant puppets fill the old towns. Passengers who want to experience more than one of them fly between the cities in a single, joyful week.

Global Diners prepares inflight catering in our kitchens across more than 2,500 airports, including Recife (SBRF / REC), Salvador (SBSV / SSA) and Rio Galeão (SBGL / GIG), with delivery coordinated with your FBO or handler at each stop. This guide is written for crews and operators planning a multi-city Carnival trip: how the three festivals differ, how to organise catering for every leg, and which regional flavours make each departure memorable. For our Rio-only Carnival guide, see Carnival season in Rio de Janeiro.

Three cities, three Carnivals

Carnival falls in February or early March each year, and all three cities celebrate over the same long weekend, from Friday or Saturday to Ash Wednesday. Each has its own character, and that character shapes the rhythm of the trip and the mood of the menus.

Planning catering for a multi-city Carnival trip

A Carnival circuit typically combines a long-range arrival, two or three domestic legs and a long-range return. Planning them together gives everyone on board the same easy experience from the first leg to the last.

  • Share the whole itinerary once: dates, airports, passenger numbers and dietary needs for every leg, so our team prepares all quotes together.

  • Match each menu to the time of day: Recife's festivities often begin early, Salvador's run late, and Rio's parades continue into the small hours.

  • Keep favourites consistent: if a passenger loves a particular dish on the first leg, we note it for the following departures.

  • Plan the long-range return separately: a full meal service with several courses suits the intercontinental flight home after Ash Wednesday.

  • Order 24 hours ahead for every leg: during Carnival, sharing the schedule a few days earlier gives our kitchens the full menu choice.

Regional flavours for each departure

From Recife: Pernambuco classics

Pernambuco has a proud sweet tradition. Bolo de rolo, the thin rolled cake filled with guava, and cartola, warm banana with cheese, cinnamon and sugar, make charming desserts. Tapioca with coconut or cheese fillings works well for a morning departure, alongside grilled fish, prawns and tropical fruit such as mango, cashew fruit and passion fruit.

From Salvador: the flavours of Bahia

Bahian cooking brings coconut, coriander and seafood together. A moqueca-inspired fish or prawn main, with the sauce packed separately for reheating, is a favourite for the cruise, while cocada and other coconut sweets close the service gently. Acarajé, the city's famous street snack, inspires lighter canapés prepared for the cabin.

From Rio de Janeiro: beach-style lightness

For departures from Rio, light and fresh is the rule: açaí bowls, fruit platters, pão de queijo, salads and grilled fish, with sliced picanha for those who want something more substantial. Our guide to Brazilian flavours on board shares more ideas.

Alongside these regional touches, the Global Diners menu card offers caviar, smoked salmon, cheese and pastries on every leg. Halal, kosher and alcohol-free menus are available, every item carries an allergen label, and caipirinha ingredients, wine and champagne are offered subject to local rules.

Looking after passengers and crew through a festival week

Carnival is joyful and energetic, and a thoughtful catering plan helps everyone on board enjoy it fully. Long nights, warm days and several flights in a short period call for menus that restore as well as delight.

  1. Plan generous water, coconut water and fresh juices on every leg.

  2. Offer a light breakfast option on each flight, even in the afternoon, for passengers who have celebrated late.

  3. Include crew meals in every order, so the team stays well fed through a busy rotation.

  4. Ask for individually portioned, labelled items: they keep service simple on short domestic sectors.

  5. Follow the reheating guidance supplied with every order, and keep sauces separate until service.

Three Carnivals in one week is a celebration. Planning every leg together is what lets the crew enjoy it too.

Before and after Carnival: the European legs

Many Carnival trips begin and end in Europe. For guests departing from France, our own kitchens prepare the outbound catering with planeside delivery at Paris (LFPB / LBG) and Nice (LFMN / NCE), and our kitchens in Brazil take over for the domestic legs. The same Global Diners menu runs through the whole journey, so the first and last services feel as personal as the festival in between.

For more planning ideas, our Brazil private jet catering guide lists every Brazilian airport on our network, with notes on local events and the best moments to fly.

Where to read more about each city

Each stop on the circuit has its own Global Diners guide. Read about private jet catering in Recife, private jet catering in Salvador and our two-city Carnival plan for Rio de Janeiro and Salvador for airport details, local events and dining notes, so the crew arrives at each city already familiar with the ground.

Events That Shape Private Jet Catering at Recife (SBRF / REC)

Recife's calendar is full of large popular festivals. Carnival transforms both Recife and Olinda for a week, with parades filling the streets and lively demand for restaurants and drivers. June belongs to São João, which draws huge crowds to Caruaru in the interior, and Holy Week brings visitors to the Passion play at Nova Jerusalém. The summer season adds beach traffic to Porto de Galinhas and Fernando de Noronha. In these periods, order earlier than the standard 24 hours, confirm passenger numbers early, agree delivery timing and access with your handler, and choose formats that cope well with heat, such as chilled platters and sealed boxes.

Recife and Olinda Carnival at Recife (SBRF / REC): February or March (varies)

Recife and Olinda hold one of Brazil's most traditional Carnivals, built on frevo and maracatu rather than samba, and the Galo da Madrugada parade on the Saturday draws enormous crowds to central Recife. Private arrivals peak in the days before, and departures cluster on Ash Wednesday. Book catering well in advance and plan the route with your handler. Refreshing items are best: chilled fruit, coconut water, tapioca and cold seafood, with sealed boxes for quick turns.

Carnival, Holy Week and festival dates change each year, so please check the current timings with our team when you order.

Local flavours for flights from Recife (SBRF / REC)

Pernambuco has a rich food culture shaped by sugar plantations, the sea and the semi-arid interior. Bolo de rolo, a thin rolled cake layered with guava paste, is the state's emblem and ideal for coffee service, along with bolo Souza Leão, a dense cassava and coconut cake. Tapioca crepes with coconut, cheese or dried meat make a light breakfast. From the sertão comes carne de sol, sun-cured beef served with macaxeira (cassava) and grilled queijo coalho, which travels well as a warm dish. Seafood is excellent: shrimp, lobster and caldinho, a small bowl of bean or seafood broth. Cartola, a dessert of fried banana with cheese, sugar and cinnamon, is a local favourite. Cashew, mango, pitanga and acerola make vivid fresh juices, and coconut water is always available. On request, our kitchens handle all of this, and a bakery or restaurant pick-up can be added.

Also nearby: Salvador (SBSV / SSA)

Salvador, the first capital of Brazil, sits on the Bay of All Saints a short flight south of Recife. Its historic Pelourinho district, its music and its Bahian cooking make it a natural second stop on a Carnival circuit, and our kitchens prepare departures there from the same Global Diners menu, with delivery coordinated with your FBO or handler.

FBOs at every airport in this guide

Here are the business aviation terminals (FBOs) at each airport mentioned above. Our team coordinates every catering delivery with the FBO or handler you choose, and our own kitchens deliver planeside at Paris (LFPB / LBG) and Nice (LFMN / NCE).

Frequently asked questions

When is Carnival in Rio de Janeiro, Salvador and Recife?

All three cities celebrate Carnival over the same long weekend in February or early March, depending on the date of Easter, from Friday or Saturday to Ash Wednesday.

Can Global Diners cater every leg of a multi-city Carnival trip?

Yes. Send the full itinerary to order@globaldiners.com and our specialised team prepares a dedicated quote for each leg, with delivery coordinated with your FBO or handler at Recife (SBRF / REC), Salvador (SBSV / SSA) and Rio Galeão (SBGL / GIG).

Which regional dishes can be served on board?

Popular choices include tapioca, bolo de rolo and cartola from Pernambuco, moqueca-inspired seafood and cocada from Bahia, and açaí, pão de queijo and picanha from Rio de Janeiro, alongside caviar, smoked salmon, cheese and pastries from the Global Diners menu card.

How early should Carnival catering be ordered?

We recommend ordering 24 hours ahead all year. During Carnival, sharing the whole itinerary a few days earlier gives our kitchens the full menu choice for every leg.

Can I order catering at Recife (SBRF / REC) for a flight during Carnival week?

Yes. Catering at Recife Guararapes (SBRF / REC) is available throughout Carnival, the busiest week of the year in Recife and Olinda. The streets are given over to the parades, so we recommend ordering several days ahead and agreeing an early delivery time with your handler. Light menus with tapioca, fruit, cold seafood and coconut water suit the heat, and celebratory platters can be added on request.

Can I get bolo de rolo and regional sweets for passengers flying from Recife (SBRF / REC)?

Yes. For departures from Recife Guararapes (SBRF / REC), bolo de rolo, bolo Souza Leão, cartola and other Pernambuco sweets can be arranged on request, either through our kitchens or by pick-up from a traditional bakery. They are well suited to afternoon coffee service and travel easily in their boxes. Whole cakes can also be packed as gifts for passengers to take home.
