Crudités and dips on a private jet are one of the simplest and most refreshing ways to look after passengers between meals. A board of crisp seasonal vegetables with a few well-made dips is colourful, light and satisfying, and it suits every kind of flight, from a short hop between Florence and the Riviera to a long afternoon over the Atlantic. It is also a natural choice for passengers who prefer to eat lightly, follow a plant-based diet or simply want something fresh after a rich lunch.

Global Diners prepares VVIP inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports. This guide explains how our kitchens build a healthy snack platter for the cabin, which vegetables and dips travel best and how cabin crew can present them beautifully, with examples from Florence (LIRQ / FLR), Venice (LIPZ / VCE) and Milan Linate (LIML / LIN) in Italy, a country of wonderful vegetables, and from our own kitchens at Paris (LFPB / LBG) and Nice (LFMN / NCE).

Why crudités work so well in the cabin

At altitude, dry cabin air and lower pressure change the way we taste and feel. Crisp, water-rich vegetables are refreshing and easy to enjoy, and they leave passengers feeling light on arrival. Our article on how altitude affects taste explains why bright, tangy and herb-led flavours shine at cruising altitude, and a good dip delivers exactly that.

Crudités are also practical. They need no oven, they hold their quality well when kept chilled, and they can be shared by the whole cabin or portioned individually. Our article on mini meals on private jets shows how small plates like these fit into a relaxed rhythm of service.

Choosing the vegetables

The best platters follow the season. Our kitchens select vegetables that stay crisp and look beautiful, cut to an easy size for eating in the cabin:

Season

Vegetables

How Global Diners prepares them

Spring

Radishes, baby carrots, sugar snap peas, asparagus, baby fennel

Trimmed with a little green left on, blanched where needed

Summer

Cherry tomatoes, cucumber, peppers, courgette ribbons, celery

Cut into batons, kept chilled and packed in sealed boxes

Autumn

Endive, cauliflower and Romanesco florets, heritage carrots

Lightly blanched for colour and a gentle bite

Winter

Fennel, celery, chicory, broccoli, watermelon radish

Thinly sliced and arranged for a bright winter board

Every platter is arranged so that colours alternate, and each vegetable is cut to a similar size, which makes the board look generous and easy to share.

Dips that travel beautifully

A good dip makes the platter. Our kitchens prepare a selection from the Mediterranean and beyond, each in its own sealed pot with an allergen label:

  • Hummus: smooth chickpea and tahini, plain or with roasted pepper or herbs (contains sesame).

  • Tzatziki: yoghurt, cucumber, garlic and dill, cool and refreshing (contains milk).

  • Guacamole: avocado, lime and coriander, prepared close to departure to keep its colour.

  • Baba ganoush: smoky aubergine with tahini and lemon.

  • Bagna cauda-style dip: a gentle Piedmontese olive oil, garlic and anchovy dip, served at cabin temperature (contains fish).

  • Green goddess and herb yoghurt: fresh herbs, lemon and a light creamy base.

  • Vegan white bean and rosemary: a Tuscan-inspired dip, naturally dairy-free.

For passengers avoiding gluten, crudités are a natural alternative to bread and crackers, and our article on gluten-free private jet catering shares more ideas. Vegan and vegetarian guests will find the full menu in our guide to vegan and vegetarian catering.

The Italian pinzimonio

In Tuscany, the simplest version of all is pinzimonio: raw seasonal vegetables dipped into the best extra virgin olive oil, seasoned with salt and pepper. It is especially lovely in late autumn, when the new olive oil arrives. Our kitchens can prepare a pinzimonio board for departures from Florence, with fennel, celery, carrots and radishes and a small bottle of Tuscan oil, alongside pecorino and a few slices of finocchiona for passengers who would like something more. In Venice, a lagoon-inspired board might add marinated artichokes from the nearby islands and a light baccalà mantecato on crostini.

Presenting crudités in the cabin

A few simple touches make a platter look as good at altitude as it does in the kitchen:

  1. Keep vegetables chilled until shortly before service, then plate them on a board or in a glass.

  2. Stand batons upright in small glasses or tumblers for an elegant, easy-to-reach presentation.

  3. Open each dip just before serving and place a small spoon beside it.

  4. Offer individual portions when passengers prefer not to share.

  5. Refresh the board with a few new pieces during a longer flight rather than serving everything at once.

Our article on sustainable private jet catering explains how seasonal sourcing and careful quantities reduce waste, which suits crudités perfectly.

Peak Dates for Inflight Catering at Florence (LIRQ / FLR)

Florence's Peretola airport is compact and close to the city, welcoming business aircraft alongside scheduled flights. Demand peaks during the Pitti Immagine fashion fairs, around the city's traditional June festivities and through the long season of villa weddings in the Tuscan countryside. Hotels and restaurants are at their liveliest at the same moments. To plan well, order earlier than the standard 24 hours, confirm guest numbers once event lists are final, and agree a clear delivery time with the handler. Tuscan cold cuts, pecorino, focaccia-style schiacciata and seasonal fruit make reliable, travel-ready choices for short European legs.
