Riviera Cuisine on Private Jets: Niçoise Menus from Our Nice Kitchen

Riviera cuisine on private jets brings the sunshine of Nice into the cabin. Niçoise cooking is one of the most distinctive regional kitchens in France: olive oil rather than butter, vegetables at the heart of every plate, herbs from the hills, fish from the bay and a touch of Italy from the centuries when Nice belonged to the House of Savoy. From our own kitchen in Nice, we prepare these dishes for departures from Nice (LFMN / NCE), where we deliver planeside, and for flights across the Riviera, from Cannes (LFMD / CEQ) to Marseille (LFML / MRS), and east along the Italian Riviera to Albenga Riviera (LIMG / ALL).

Global Diners operates its own production kitchens in Paris, Nice and Madrid and prepares inflight catering in our kitchens across more than 2,500 airports. This guide is a tour of the Niçoise table as it appears on board: the classics that travel beautifully, the seasons that shape the menu, and the simple ways to bring a taste of the Riviera to any flight, whether it leaves Nice or lands there.

What makes Niçoise cuisine different

The cuisine of the County of Nice grew from a simple, generous way of living between the mountains and the sea. Olive trees cover the hills behind the city, and the small, dark Cailletier olive gives Nice its own appellation olive oil. Vegetables from the market gardens of the Var valley fill the stalls of the Cours Saleya market every morning, and anchovies, sardines and rockfish come from the Mediterranean a few steps away.

This produce shapes a cooking style that is light, colourful and full of flavour, which is exactly what makes it so well suited to flying. Many Niçoise dishes are traditionally eaten at room temperature, designed for picnics on the beach or lunches in the fields. They hold their texture, need little or no reheating and look beautiful on a plate, three qualities every cabin crew appreciates.

Around these classics, the Niçoise pantry adds endless small pleasures: tapenade and anchoïade with crisp vegetables, courgette-flower fritters in early summer, fougasse and olive bread, ratatouille served cold as a salad, and the famous Menton lemons in tarts and sorbets. Each item carries allergen labelling, and every hot dish comes with clear reheating guidance.

A menu that follows the seasons

Niçoise cooking is seasonal by nature, and our menus follow the market. In spring, the first broad beans, artichokes and asparagus arrive, and the salade niçoise is at its best with young vegetables. Summer brings ripe tomatoes, courgettes, aubergines and peppers for petits farcis and ratatouille, along with peaches, apricots and figs. Autumn is the season of mushrooms from the hinterland, chestnuts and the olive harvest, and winter brings citrus from Menton, where the Lemon Festival fills the gardens with colour each February.

  • Spring: young artichokes, broad beans and asparagus, with salade niçoise and strawberry tarts.

  • Summer: petits farcis, cold ratatouille, courgette-flower fritters, and peaches and apricots for dessert.

  • Autumn: wild mushrooms, chestnuts, daube niçoise and warm tourte de blettes.

  • Winter: citrus from Menton, socca and pissaladière for aperitifs, and warming soups for evening flights.

The Niçoise table is the Riviera in a single plate: olive oil, a little garlic, the best vegetables of the morning and nothing more than they need. Our team builds each tray around that idea, so a short flight along the coast feels like a long lunch on a terrace.

From our Nice kitchen to the aircraft

Our kitchen in Nice prepares every order following HACCP principles, with a careful cold chain from the moment a dish is finished to the moment it reaches the galley. At Nice (LFMN / NCE), our own team delivers planeside, timed to the crew's preferred loading moment. For Cannes (LFMD / CEQ) and Marseille (LFML / MRS), delivery is coordinated with your FBO or handler, and the same Niçoise menu travels along the coast.

We recommend ordering 24 hours ahead to enjoy the full seasonal choice. For the busiest weeks of the year, such as the Cannes Film Festival in May or the Monaco Grand Prix, a little more notice is always welcome. Our guide to peak days on the Riviera covers these weeks in detail, and the complete guide to Nice Côte d'Azur explains how planeside delivery works at Nice.

Ligurian cousins and Corsican neighbours

Niçoise cooking has close relatives across the border. In Liguria, socca becomes farinata, pissaladière becomes sardenaira, and the pesto of Genoa is a cousin of the Provençal pistou. Flights from Albenga Riviera (LIMG / ALL), the airport of the Riviera di Ponente near Alassio and Finale Ligure, can combine both traditions on one tray: focaccia and farinata alongside pan bagnat and salade niçoise. To the south, Ajaccio (LFKJ / AJA) brings Corsican flavours such as brocciu cheese, chestnut flour cakes and cured charcuterie, which sit beautifully next to a Niçoise menu on a short hop across the sea.

From Albenga to Nice and across to Ajaccio, the Riviera shares one language in the kitchen: olive oil, herbs, vegetables and the sea.

Pairings, restaurant favourites and alcohol-free options

The hills above Nice produce one of France's smallest appellations, Bellet, with fresh white wines and delicate rosés, and the nearby Côtes de Provence is famous for its pale rosé. Wine and champagne can be added subject to local rules, and our article on private jet wine pairing suggests matches for each dish. For alcohol-free cabins, lemonade made with Menton lemons, iced herbal teas with verbena from the hinterland and fresh fruit juices are always available.

Many guests also have a favourite restaurant on the Riviera. Restaurant pick-ups can be coordinated on request, and they combine naturally with our Niçoise menu: a signature dish from the restaurant, completed by socca, salads and desserts from our kitchen. Our guide to restaurant pick-ups for private jets in Nice shows how it works.

Bringing the Riviera to every flight

A Niçoise menu is not only for departures from the coast. Owners flying to Paris Le Bourget (LFPB / LBG) or Geneva often ask for a taste of the Riviera on the way home, and our Paris kitchen and our kitchens across the network can prepare the classics that travel best. Halal, kosher and alcohol-free menus are available, and many Niçoise dishes are naturally vegetarian, which makes mixed cabins simple to serve.

Private Jet Catering Calendar for the Ligurian Riviera di Ponente and Albenga Riviera (LIMG / ALL)

Albenga's calendar follows the Riviera. Summer brings a steady flow of leisure flights to villas and beach resorts, while events in Sanremo and Monaco create short, intense peaks when larger airports fill up and some traffic shifts to smaller fields. Its compact apron makes early planning especially worthwhile. For these weeks, order earlier than the standard 24 hours, confirm passenger numbers as soon as possible, agree the delivery time with your FBO or handler before arrival and choose formats that hold up in warm weather, such as chilled seafood, salads and sealed individual meals.

Sanremo Music Festival at Albenga Riviera (LIMG / ALL): February

Italy's best-known song contest runs for a week at the Teatro Ariston and is broadcast live to millions of viewers. Artists, record labels, media and sponsors fill Sanremo, and private arrivals rise across the western Riviera. Evening shows end late, so plan suppers for departures after the final night. Order well in advance, keep menus light during rehearsal days, and confirm the expected wheels-up time with our team so the handler can receive catering at the right moment.

Riviera event dates change each year, so please confirm the current timing with our team when ordering for Albenga.

Things to do around Albenga Riviera (LIMG / ALL)

Alassio's long beach and its Budello lane of shops are the classic Riviera di Ponente outing, with Laigueglia's fishing village feel next door. Gallinara Island, a nature reserve off Albenga, can be viewed on boat trips. Finale Ligure is known for rock climbing, mountain biking and sea kayaking, and its walled Finalborgo is one of Italy's most attractive villages. Inland, the Arroscia and Neva valleys offer hiking, olive groves and wine estates. Toirano's caves are a popular excursion, and golf courses are within reach along the coast. Summer boat trips also run along the coast from Alassio.

Culture and heritage near Albenga Riviera (LIMG / ALL)

Albenga has one of the best-preserved medieval centres in Liguria, with brick towers, the cathedral of San Michele and an early Christian baptistery with fifth-century mosaics. The Roman Naval Museum displays amphorae recovered from a Roman shipwreck off the coast. Along the Riviera, hilltop villages such as Colletta di Castelbianco and Zuccarello keep medieval layouts, while Alassio's Muretto wall carries ceramic tiles signed by famous visitors.

Also nearby: Ajaccio (LFKJ / AJA)

Ajaccio Napoléon Bonaparte Airport serves Corsica's capital and the island's west coast. Private passengers come for summer villas and hotels around the Gulf of Ajaccio, for yachts cruising towards the Sanguinaires islands, the Calanques de Piana and the Scandola nature reserve, and for estates in the mountain villages inland. Business traffic linked to the regional administration continues through the year. Leisure demand builds from May, peaks in July and August, and remains steady into September, when the sea is still warm and the island quieter.

The Route des Sanguinaires leads west from Ajaccio to the Pointe de la Parata, where the red granite Îles Sanguinaires catch the sunset. Beaches line the gulf on both sides, with Porticcio across the bay a favourite for families. Boat trips run to the Calanques de Piana and the Scandola nature reserve on the west coast. Inland, mountain villages, river pools and walking trails reveal another side of Corsica, and sections of the GR20 trail are accessible within a day's drive. Diving, sea kayaking and sailing are popular from late spring to early autumn.
