Private Jet Catering Porto Alegre (SBPA / POA): Gaúcho Churrasco Menus

Private jet catering in Porto Alegre begins, for many guests, with one word: churrasco. In Rio Grande do Sul the grill is far more than a way of cooking. It is a ritual of hospitality born on the pampas, where gaúcho cattlemen roasted beef over open embers with nothing but coarse salt. Bringing that tradition on board from Porto Alegre (SBPA / POA) is one of the most rewarding menus we prepare, and one that asks for real care in the kitchen.

Global Diners prepares inflight catering in our own kitchens in Paris, Nice and Madrid and in our kitchens across more than 2,500 airports, including every major Brazilian airport. In Porto Alegre, delivery is always coordinated with your FBO or handler. This guide focuses on the gaúcho churrasco menu: the cuts, the sides, how grilled meats travel well at altitude, and how to pair them with the flavours of the Serra Gaúcha.

Porto Alegre (SBPA / POA), where Global Diners delivers private jet catering
Grilled beef, carved and rested in our kitchen: the heart of a gaúcho churrasco menu on board.

Churrasco, the gaúcho way

The gaúcho churrasco is beautifully simple. Large cuts are seasoned only with sal grosso, coarse rock salt, threaded on long skewers or laid on a grill, and cooked slowly over wood or charcoal embers until the outside is crisp and the inside tender. The host carves at the table, offering the first slices to the guests. In southern Brazil this is a Sunday tradition, a celebration and a business lunch all at once.

On a private jet we keep the spirit and adapt the method. Our kitchens grill and rest the meat, carve it into generous slices and pack it so the crew can warm it gently and serve it with the same sense of occasion. The result is a churrasco that feels generous and authentic, served at the passenger's own pace.

A great churrasco is about patience and generosity. On board, that means meat rested with care, sliced with precision and served without hurry.

The cuts that make a gaúcho menu

Cut

Character

How Global Diners prepares it for the cabin

Picanha

The prized rump cap, with its fat crown for flavour

Grilled, rested and sliced, with reheating guidance for a rosy centre

Costela

Beef rib, slow-cooked until meltingly tender

Slow-roasted, portioned off the bone and packed in its juices

Maminha

Tender bottom sirloin, lean and delicate

Carved thinly, ideal hot or cold on short sectors

Fraldinha

Flank steak with a rich, open grain

Sliced across the grain, served warm with chimichurri on the side

Galeto

Spit-roasted young chicken from the Serra

Jointed and roasted, a lighter option for mixed cabins

Most cabins enjoy a choice of two or three cuts, with chicken or grilled fish for guests who prefer a lighter plate. Halal menus are available on request, and every item is labelled for allergens so the crew can serve with confidence.

Sides, sauces and the finishing touches

A churrasco table is never only meat. The classic accompaniments travel well and bring colour and texture to the tray:

  • Farofa: toasted cassava flour with butter and onion, the essential crunchy companion to grilled beef.

  • Vinagrete: a fresh salsa of tomato, onion, pepper and vinegar, packed separately to keep it bright.

  • Mandioca: cassava, boiled until soft or roasted golden, a comforting side for hot service.

  • Arroz carreteiro: the gaúcho rice with beef, hearty and perfect for longer flights.

  • Chimichurri: the herb and garlic sauce loved across the Río de la Plata region, always in its own pot.

  • Pão de alho and salads: garlic bread and green salads to balance the richness of the grill.

Sauces are always packed separately and every hot item comes with reheating guidance. For dessert, the south offers ambrosia, the gentle egg and milk sweet of Rio Grande do Sul, doce de leite and the German-style cuca cakes of the Serra Gaúcha, alongside the French pastries and cheeses of the Global Diners menu.

Wine glasses ready for a Serra Gaúcha pairing with churrasco on a private jet
Serra Gaúcha wines and sparkling wines pair naturally with churrasco, subject to local rules.

Pairing churrasco with the Serra Gaúcha

Two hours north of Porto Alegre, the hills of the Serra Gaúcha are home to most of Brazil's wine production, with the Vale dos Vinhedos around Bento Gonçalves as its best-known valley. Italian immigrants planted the first vineyards in the late nineteenth century, and today the region is particularly admired for its sparkling wines. Red wines from the Serra suit picanha and costela beautifully, and a glass of sparkling wine opens the meal with a festive note, subject to local rules.

For guests who prefer not to drink alcohol, the same valleys produce excellent whole grape juice, deep in colour and flavour, which pairs remarkably well with grilled meat. Our guide to wine pairing on private jets shares more ideas on serving wine at altitude.

When Porto Alegre comes together around the grill

Churrasco takes centre stage at several moments of the gaúcho year. The Expointer agricultural fair in Esteio, from late August to early September, brings ranchers, cooperative leaders and machinery makers to the region. In September the Semana Farroupilha fills Porto Alegre with gaúcho culture, horsemanship and, naturally, grills. From late October, the Natal Luz Christmas season in Gramado and Canela draws visitors to the hills, and the Gramado Film Festival animates August.

Many of these trips combine Porto Alegre with Florianópolis (SBFL / FLN) for the island's beaches, Curitiba (SBCT / CWB) for Paraná business, or São Paulo Guarulhos (SBGR / GRU) for São Paulo. Sending the full itinerary in one request lets us vary the menu leg by leg, perhaps churrasco on the way out and seafood from Florianópolis on the way back.

Inflight Catering for Porto Alegre and the Serra Gaúcha Festivals, Races and Shows (SBPA / POA)

The busiest months at Porto Alegre run from late August to January. Expointer brings agribusiness leaders to nearby Esteio, Semana Farroupilha fills the city with gaúcho culture, the Book Fair animates the centre, and Gramado's Christmas season draws visitors to the hills. August is also the month of the Gramado Film Festival. In winter, morning mist over Lake Guaíba makes flexible delivery windows a sensible choice. In these periods, order earlier than the standard 24 hours, confirm passenger numbers early, agree delivery timing with your FBO or handler and choose items that hold well, such as cold platters, sandwiches and hot dishes in thermal carriers.

Expointer at Porto Alegre (SBPA / POA): Late August to early September

Expointer is one of Latin America's largest agricultural fairs, combining livestock competitions with machinery and technology exhibits in Esteio, about 20 km north of Porto Alegre. Farm owners, cooperative leaders, ministers and equipment makers fly in, and the apron fills with business aircraft. Order catering several days ahead. Boxed lunches and cold churrasco cuts suit the drive to the showground, while evening flights home appreciate hot dishes and wine-country grape juice.

Fair, festival and holiday dates vary from year to year, so please confirm the current calendar with our team when you place your order.

Dining and shopping near Porto Alegre (SBPA / POA)

Dining in Porto Alegre ranges from traditional churrascarias to contemporary restaurants in Moinhos de Vento and Petrópolis. The Mercado Público has historic cafés, ice cream counters and stalls selling yerba mate, cheese and smoked meats. Rua Padre Chagas and the surrounding streets of Moinhos de Vento are the city's smartest area for dining, bars and boutiques. Large shopping centres such as Iguatemi and Moinhos Shopping cover international brands. Serra Gaúcha wines and grape juice make good gifts.

Local flavours for flights from Porto Alegre (SBPA / POA)

Rio Grande do Sul is the home of churrasco, and the gaúcho grill, with beef ribs, picanha and sausages cooked over embers, sets the tone. Sliced cold meats, steak sandwiches and grilled vegetables make fine cabin fare. Arroz carreteiro, rice cooked with dried beef, is a hearty warm dish that holds well in thermal carriers. Italian immigrants in the Serra Gaúcha brought galeto (spit-roast chicken), polenta, cappelletti in broth and salamis, while German communities added cuca, strudel and smoked meats. The state produces most of Brazil's wine, and the Vale dos Vinhedos is known for sparkling wines; grape juice from the same valleys is an excellent non-alcoholic option. Chimarrão, the hot yerba mate shared from a gourd, is part of daily life. Sagu, tapioca pearls cooked in red wine, is a traditional dessert. Our kitchens supply these on request, and churrascaria pick-up can be organised.

Also nearby: Florianópolis (SBFL / FLN)

Florianópolis, the island capital of Santa Catarina, is a short flight north of Porto Alegre and the natural seaside complement to a gaúcho itinerary. Its kitchens are known for oysters farmed in the island's bays, shrimp and fresh fish, and its beaches fill each summer. A churrasco on the outbound leg and chilled seafood on the return make a lovely contrast between the pampas and the sea.
